L

ittle Latke potato latke crisps are the first
shelf-stable crunchy snack inspired by a tra-
ditional potato latke. The innovative snack
is the diameter of a cracker but is densely packed
with potato and onion goodness. Each resealable
pouch contains 12 crisps, which is four servings.
Little Latke is OK kosher-certified, gluten-free
and vegan. The product is newly available for pur-
chase online in advance of the Chanukah season.
Little Latke is the first product from Taylor
Blue, 29, originally from Dallas, Texas, and
currently based in Chicago. Prior to launching
Little Latke, Taylor worked for several years in
third-party logistics, which has been valuable in
many aspects of launching the business. However,
she aspired to find her place in the culinary
world and pivoted to pursue culinary school. She
then worked in catering, where she learned to be
efficient and about the intricacies of food safety.
After gaining this experience, Taylor decided to
focus on Little Latke full time.
The inspiration for the product comes from
Blue’s mother, Nicole, who was famous for her
latkes.
Blue explains, “Some would describe our family
as ‘latke piranhas;’ no matter how many my mom
would make, it was never enough.”
During the pandemic, Blue experimented with
making Nicole’s recipe and selling the latkes. In
just three days, she had 100 orders of a dozen lat-
kes from only word of mouth.
Blue knew then that she wanted to bring her
mother’s latke recipe to a larger audience. After
conducting a survey among friends and family,
she concluded that people’s favorite part of eating
potato latkes is their crispy crunchy edges.
As making potato latkes can be onerous, from
grating the potatoes and onions to frying over a
hot stove, she set out to capture that experience in
a shelf-stable snack available year-round, making
potato latkes more broadly accessible. It took four
years to develop the idea and bring it to fruition
at the right time.
“Combining my professional experiences with
my years of research and developing the idea, I
felt I had the tools and confidence to really take
the leap for Little Latke,” she said. She very much
identifies with the brand, explaining, “This brand
is like my family; it really hits close to home.”
As this is Blue’s first time developing a product
and bringing it to market, she expressed that she
faces new challenges all the time. “Every day is a
