known for, are out of this 
world My grandchildren 

always ask, “Please have Bubbie 
bake muffins for us!” My daughter 

buys bananas and 
lets them turn brown 
just so she can give 
them to me to make 
banana muffins. They 
are soft and tender 
and oh, so yummy! 
 Once you taste 
them, I would not be 

surprised if you, too, buy bananas 
just so they can turn brown and 
you can turn them into banana 
muffins for your family. 

DEBRA’S FAMOUS 
BANANA MUFFINS
Yields: 12 (Can be frozen)

Ingredients

1½ cup flour

1 teaspoon baking soda

½ teaspoon kosher salt

3 ripe bananas, mashed

1 cup sugar

2 eggs

½ cup canola oil

1 teaspoon vanilla

1 cup mini chocolate chips

Directions
Preheat the oven to 350F. Line 
a 12-cup muffin tin with paper 
liners. Set aside.

Mix together the mashed 

bananas and sugar. Add the eggs 
and the vanilla. Slowly add the oil 
and mix together.

Add the flour, baking soda and 

salt and mix together gently. Add 
the mini chocolate chips.

Scoop into the paper lined 

muffin cups, dividing evenly.

Bake at 350F for 21-25 minutes 

or until golden brown or until a 
toothpick inserted in the center 
comes out clean.

Let cool for 15 minutes and then 

remove to a wire rack.
