COOKIE’S HOMEMADE 
HAMANTASH RECIPE FOR 
A DELICIOUS PURIM

Poppy Seed Filling (Parve)
Ingredients:

1 cup poppy seeds (ground or whole)

½ cup water

½ cup sugar

Lemon zest, to taste (optional)

Instructions:
Combine poppy seeds, water, sugar and lemon zest 
(if using) in a saucepan.
 Heat the mixture over low heat, stirring constantly, 
until the water is absorbed and the mixture thickens 
(about 15 minutes). Note: Grinding the poppy seeds 
before adding them will result in a finer filling.

Hamantash Dough (Parve)
Ingredients:

4 eggs

1 cup oil

1¼ cups sugar

2 teaspoons vanilla extract

3 teaspoons baking powder

½ teaspoon salt

5 cups flour

Instructions:
In a mixer on low speed, combine eggs, oil, sugar, 
vanilla extract, baking powder and salt until mixed.
Slowly add flour until a dough forms.
 Remove dough from the mixer and roll it out (in 
sections, if necessary) to a roughly round shape, 
about one-eighth inch thick.
 Use a 4-inch cookie cutter to cut out circles from 
the dough.
 Place 1 generous teaspoon of poppy seed filling 
in the center of each dough circle.
 Fold the dough into triangles by bringing two 
opposite sides up to meet in the center, then fold 
the bottom point up to meet the center and pinch 
the sides closed.
 Place the hamantashen on a lightly greased or 
sprayed cookie sheet.
 Bake at 350°F for 10-20 minutes, depending on 
your preference for softness or crispness.
