Add white and light green scallions; saute for 1 minute. Add cooked rice, stirring well to incorporate. Add soy sauce and pepper; still well until all the rice is brown, about 1 minute. Make a well in the center of the rice; add egg, stirring constantly for 30 seconds to begin cooking the egg. Mix well to incorporate. Transfer to a serving dish. Top with remaining scallion greens. Makes 6-8 servings. Note: It is best to use day-old rice. Or cook rice, transfer it to a 9- by 13-inch pan, cover and freeze for about an hour to become cool and firm. Make sure the rice is not too sticky; the grains should be well separated. Don’t salt the rice while cooking it. If the rice has been salted, then use low-sodium soy sauce or the dish will be too salty. If you are unable to find cooked beef pastra- mi, any deli meat, such as pastrami or corned beef or even salami will work well instead. Use 1 or 2 (6 oz.) packages of deli meat or 1 (16 oz.) salami log, chopped. FRENCH’S HONEY- MUSTARD SALMON Ingredients: 6-8 salmon fillets, skinless (or a side of salmon) Sea salt, to taste Pepper, to taste 1 Tbsp. extra-virgin olive oil or olive oil spray ½ cup honey ¼ cup yellow mustard 1½ cups French’s fried onions, crushed Directions: Preheat over to 375 degrees. Line a baking sheet with parchment paper and place the salmon on it. Season to taste with salt and pepper; brush with olive oil. In a small bowl, stir together honey and mustard until fully combined. Spread the mixture over the salmon, covering the entire surface. T op with crushed fried onions. Bake salmon, uncovered, for 25 minutes or until cooked through. Makes 6-8 servings.
