The nuts had been soaked through an Indian tradition and Orley fell in love with the taste and crunch, so she began experimenting and perfecting her own three-day process of soaking and dehydrat- ing nuts. Soon she was making and gifting nuts to everyone in the community and, in 2008, the Health Nut was born.
