Rugby Grille launches new seasonal menu.

T
he Rugby Grille previewed its new fall menu, which
starts this week, and there’s something for everyone
to love.
At a media preview last week, featuring Chef Eric Avila,
local bloggers and food writers were given a taste of what’s
to come. The evening began with appetizers, including the
chilled Scallops Crudo with jalapeno and red pepper, giving
it a spicy kick.
Next up came a taste of the Grand Seafood Tower, a work
of art by Avila with king crab legs, prawns, oysters, lobster
tail, octopus and tuna with three sauces: cocktail, wasabi soy
and an apple-cucumber mignonette — a feast on the menu
for $99. Special fall cocktails were previewed, including a
Pumpkin Pie martini as well as the Fall Luis Martini, made
with ginger beer, apple cider, vodka and a dash of cinnamon.
It really was a taste of the season.
New entrees sampled included the Short Rib ($56), a truly
sumptuous 12-oz. prime beef short rib served on a goat cheese
truffle polenta cake with roasted wild mushrooms and natu-
ral pan jus, and the Lamb Osso Bucco ($58), Colorado lamb,
served with boursin whipped potatoes, roasted acorn squash
and lamb jus.
The evening was capped off with
pumpkin creme brulee and bread
pudding with blueberry compote.
Both magnificent!
Steve Kalczynski, managing
director of the Townsend Hotel,
said he and Avila went on a
trip to New York to sample new
dishes for inspiration for the fall
menu. “We did nothing but eat
for four days,” Kalczynski joked.

rating as well as the very exclusive Wine Spectator Best of
Award of Excellence for 2016 and 2017.
The new inspired fall menu launches Oct. 6. •
