CLASSIC JELLY DOUGHNUTS
4½ cups flour (preferably bread
flour)
½ cup sugar
1 teaspoon salt
2 Tbsp. fresh yeast or 2 tsp. dry
yeast
4 large free-range eggs
½ cup milk (or water)
2 Tbsp. brandy (or other liqueur,
such as bourbon)
1 stick butter
Plenty of oil for deep frying
Filling and serving:
Jam
Powdered sugar

Blend flour, sugar, salt and yeast
in a mixer with a dough hook for
about 10 seconds. Add eggs, milk
(or water) and liquor and knead at
a slow speed for 5 minutes, or until
the dough begins to be elastic. Add
butter and increase the kneading
speed. Knead another 7-10 minutes
until dough is soft, shiny and elastic.
Form dough into a ball, place in

a greased bowl, cover with plastic
wrap and let it rise slowly in the
refrigerator overnight.
Divide the dough into about 35
pieces. Roll the pieces of dough
into balls, and set them to rise on a
baking sheet lined with parchment
paper and brushed with oil.
Wrap the baking sheet in a plastic
bag, and leave it to rise in a warm
place. Let doughnuts rise for about
an hour, or until almost doubled in
bulk.
Heat oil for deep-frying to 325°F.
Carefully turn the doughnuts into
the oil (one by one) and fry for 2-3
minutes on each side until golden.
Place on paper towels.
Cool the doughnuts and fill with
jam (or different filling): Fit a pastry
bag with a small tip and fill with
jam. Poke a small hole in the side
of the doughnut and pipe the jam
inside.
Before serving, sprinkle with pow-
dered sugar. Makes 35 doughnuts.
