Happy Passover! dining in Do you like The Maple Theater? Snack Time! There’s more to Passover snacks than matzah and butter. S nacking can be a challenge during Passover. How much leftover kugel, gefilte fish or brisket on mat- zah can one eat? There’s the usual matzah Annabel Cohen s’mores (try Food Columnist them with the toasted coconut marshmallows), matzah brei or matzah pizza. But for a little more fun, take a look at these treats — great for packing lunches and after-school snacks, too. You might even forget you’re eating matzah. MATZAH NACHES NACHOS 4 matzah boards or sheets Olive oil for brushing on the mat- zah Kosher Salt Topping: 1-2 cups grated cheddar or mozza- rella cheese (or a combination), about 8 ounces (use as much as you prefer) Salsa: 1½ cups chopped fresh tomatoes 1 yellow bell pepper ½ cup finely chopped onion ¼ cup fresh lime or lemon juice Salt and pepper to taste Hot sauce or ground cayenne pep- per to taste Garnish: Fresh avocados, sliced Chopped fresh cilantro leaves or scallions (white and green parts) Preheat oven to 325°F. Brush the matzahs with olive oil and place on a rimmed baking sheet (or 2). Sprinkle lightly with salt and bake for 10-15 minutes until golden. Allow to cool and break up the matzah. Line the baking sheet with parchment or foil (overlapping the edges of the baking sheet). Place the broken mat- zah on the sheet (you may overlap the pieces). Sprinkle with cheese. Raise oven temperature to 400°F and bake the “nachos” until the cheese is very melted, 10-12 minutes. While the nachos are baking, prepare the salsa. Combine all the ingredients in a medium bowl and stir well. Serve the nachos with salsa and sprinkled with the avocados, cilantro Then you will love the Maple Kitchen! and dollops of sour cream, if desired. Makes 6-8 snack servings. PESADIK GRANOLA ½ lb. matzah farfel 1 cup sweetened shredded coconut 1 cup chopped nuts, any variety or combination ½ tsp. ground cinnamon ¼ cup vegetable oil ¾ cup white grape juice ¾ cup water ½ cup sunflower seeds ½ cup dried cranberries ½ cup golden raisins Preheat oven to 300ºF. Spray two bak- ing sheets with nonstick cooking spray or brush lightly with vegetable oil. Combine farfel, coconut, nuts and cinnamon in a large bowl and toss. Drizzle oil and juice over and toss well. Spread mixture onto prepared bak- ing sheets and bake for 50-60 minutes, turning the mixture once or twice until lightly browned. Remove from oven and cool completely. Add sunflower seeds, cranberries and raisins and toss well. When cool, store in a tightly covered container. Serve with fruit or vanilla yogurt spooned over or with milk. Makes 8 or more servings. MATZAH CHICKEN STRIPS 3 cups finely crumbled matzah (I use the food processor, not matzah meal) 2 tsp. kosher salt Vegetable oil 1 lb. chicken breasts, slightly fro- zen, cut thin into 1½-inch-wide strips Ranch dressing or ketchup, to gar- nish Beat egg and salt in a shallow dish. Place crushed matzahs in another shallow dish. Preheat oven to 325°F. Brush a rimmed baking sheet well with oil. Working with 1 at a time, dip the chicken strips in egg and then dredge them with matzah crumbs, pressing the crumbs if needed to stick onto the chicken. Place the strips on the prepared baking sheet and bake for 10 minutes. Turn the strips over with tongs and bake for 10 minutes more. Serve hot or warm.
