of Mexican-born brothers, owner
Luis Negrete and Executive Chef Juan
Carlos Negrete, quietly opened their
Spanish restaurant, La Dulce, Aug. 25 in
Royal Oak.
The transformation of this
former shoe store is remark-
able. Interior designer Gaspar
Sobrino of Madrid, Spain,
created walls from washed-out
white wood panels that were
digitally printed with a soft
blue French Provencal design.
The boxy loveseats and chairs Esther
Allweiss
are covered in a Ralph Lauren-
Ingber
designed linen fabric.
The airy front room has
a large tree, twin fireplaces and scads
of blue-and-white pots with green
faux plant tops. The pots are on high-
rise, open shelving, which is also used
elsewhere to display decorative plates,
antique books and other objects.
White teacups are a prevalent design
element. They are part of the street sign,
nestle in spirals under glass-topped
cocktail tables, frame the mirrors and
portraits of aristocratic women and join
with white saucers for creative chande-
liers.

Born in San Diego but raised in Mexico
City, her Jewish grandparents escaped
Europe around the time of World War
II.
I had the pleasure of visiting La Dulce
at lunchtime. Holoschutz introduced me
to Aceitunas Mixtas, assorted Spanish
olives with separately marinated garlic
and onion. My cheese sampler had goat,
sheep and cow's milk cheeses, served
with cute little "pico" breadsticks. A
charcuterie sampler features cured,
smoked and preserved meat.
The Prix Fixe lunch ($15) has three
courses: soup, sandwich or quiche and
deep-fried churros. Sprocket-sized in
their serving cup, the non-greasy treats
are rolled in cinnamon and sugar.
Larger churros come with three dipping
sauces.
The seafood soup, a delicious
special, had mussels in shells,
lobster, octopus, shrimp and
more in a tomato-enhanced
consomme. A vegetarian soup
was roasted red pepper.
My Bonito sandwich on cia-
batta bread had chunks of white
tuna packed in olive oil from
Spain, caper berries, lettuce and
tomato. The accompanying salad
was arugula, but may be kale or
other fresh greens. I detected mustard
and lemon in the salad's olive oil-based
vinaigrette dressing. Spanish cooking
never uses butter.
I tried a wedge of asparagus quiche.
Slivers, not pieces, filled a wonderfully
flaky crust. Beet quiche was available
another day.
Tapas (small plates) are the focus at
night. La Dulce is set up in the Spanish
style, encouraging guests to socialize
around low tables or at the white-tiled
bar. They convivially share food while
enjoying beverages, including Spanish
wine, sherry and Chazzano coffee. La
Dulce has exclusive rights in Michigan
to sell Kusmi Tea Paris, a brand dating
to 1867. I liked Anastasia, a black tea
with bergamot, lemon and orange blos-
som.
A typically Spanish tapa is Tortilla de
Patata, a raised pie of eggs, fried pota-
toes and caramelized onions. Unusual,
but selling well, is Pintxo de Pulpo,
which includes octopus. Also popular
is Tapa de Langosta, with lobster, cauli-
flower puree and saffron.
Paella is offered at brunch, when Chef
Juan Carlos tries out items that might
make the regular menu. The fall offer-
ings, for example, include a new duck
dish and grilled endive and stone fruit
salad. Reservations for brunch and din-
ner are advised; closed on Mondays. *
