SPINACH-ROASTED
RED PEPPER AND
RICOTTA FRITTATA

3 Tbsp. olive oil
1 cup chopped onions
1 tsp. fresh minced garlic
1 roasted red bell pepper
4 cups fresh baby spinach
(if frozen, 10-oz., thawed/
drained)
3 slices of white or whole-
wheat bread
8 large eggs
1 cup ricotta cheese
1 /2 cup fresh grated
Parmesan or Mozzarella
cheese
1 tsp. kosher salt
1 /2 tsp. freshly ground black
pepper

NEED HELP PLANNING YOUR SEDER?

Preheat oven to 350°F. Heat oil
in large, nonstick ovenproof skil-
let (it's very important the skillet
be nonstick), over medium-high
heat.
Add onions and garlic; saute
until tender. Set pan aside for the
vegetables to cool.
Wet the bread slices and
squeeze to drain. Place in a large
bowl. Place eggs and cooked
vegetables and any remaining
ingredients in a large bowl and
whisk until well combined.
Spray the same skillet well (do
not clean the skillet beforehand)
with nonstick cooking spray. Pour
the egg mixture into the skillet
and cook on the stove at medium
heat for 5 minutes (the eggs will
not be cooked through).
Place the skillet in the oven
and bake until the eggs are set
(15-20 minutes). Remove from
oven and cool for about 15 min-
utes. To serve, tip the frittata out
of the pan onto a serving plate
(do not serve the frittata upside
down). Cut into wedges and
serve warm or at room tempera-
ture.
Makes 8 servings.
