Scratch the top of one side of the brie with a fork (this helps to keep the preserves and mustard in place). Spread the mustard over the top of the brie. Spread the preserves over the mustard. Set aside. Lay one sheet of filo dough on a flat surface. Brush lightly with melted butter; repeat with six sheets. In the center of the filo, arrange nuts and dried fruit in a circle approximately the size of the brie. Place the brie, mustard/apricot-side down over the fruit and nuts. Fold the sides of the filo over the brie, brushing more but- ter on the filo to keep it in place. If the filo is too small to close around the cheese, use the last sheet as a patch. continued on page C64
