CHERRY CRANBERRY AND APRICOT CHUTNEY

This is a tasty addition or alternative to traditional cranberry sauce, made with
dried cherries, dried cranberries and apricot preserves. It tastes great the next
day on turkey sandwiches.
1 cup dried cherries
1 cup dried cranberries
1 cup apricot preserves or jam
1 cup chopped onions
1 bell pepper, any color, chopped
1 cup orange juice
2 Tbsp. red wine vinegar
1 tsp. cayenne pepper
1 Tbsp. fresh grated ginger (use fresh only)
1 Tbsp. grated orange zest or peel

Turkey:
1 5-6 lb. turkey breast, skin on,

bones removed
2 Tbsp. extra virgin olive oil
1 Tbsp. dried parsley flakes
1 tsp. dried rubbed sage
1 tsp. dried rosemary
1 tsp. thyme
1 tsp. dried tarragon
kosher salt and pepper to taste

Preheat oven to 375 degrees. Spray a
roasting pan or disposable aluminum
pan with nonstick cooking spray (if
you have a rack, use it as well).
Rub the turkey breast well with the
oil. Combine the parsley, sage, rose-
mary, thyme and tarragon in a small
bowl, and stir to mix. Use your hands
to rub this mixture over the turkey.
Season with salt and pepper.
Place the turkey breast skin-side-
up in the prepared pan. Roast uncov-
ered for 30-45 minutes. (A thermom-
eter inserted into thickest part of
turkey should register 170 degrees).
Allow the turkey to rest for 10
minutes before thinly slicing against
the grain and serving with pan juices
drizzled over. Makes 12 servings.

EASY GRAVY
'/2 cup turkey fat drippings (or but-
ter or margarine)
1/2 cup flour
roast turkey pan drippings
3-4 cups turkey or chicken broth
salt and pepper to taste

Strain the pan drippings into a bowl.
Allow to sit for about 15 minutes.
Use a fat separator (looks like a mea-
suring cup with a long low spout)
to pour about 1/2 cup of the fat into
a large saucepan over medium heat.
(Remove remaining fat from the
drippings, and discard). If you don't
have a separator, spoon the fat from
the drippings.
Alternately, melt butter or marga-
rine in the same saucepan if you have
very little fat drippings.
Add the flour, and whisk well for
about 3 minutes. Add the turkey
drippings to the pan, and whisk well.
Slowly whisk in the broth until
the gravy is thickened (but not too
thick). Add salt and pepper to taste.
Keep warm, or reheat before serving.
Makes 4 cups of gravy.

Combine all ingredients, except orange zest, in a saucepan over medium-high
heat. Bring to a boil, reduce heat and simmer, stirring constantly for 30 minutes.
Add the grated zest, and cook for 5 minutes more. Let cool, and chill before
serving. Serve at room temperature. This recipe may be made up to one week
ahead.
Makes 20 servings.
