Topping:

3 Tbsp. pine nuts, lightly toasted
11 /4 cup fresh chopped or shredded
basil leaves
3 Tbsp. balsamic vinegar
1-2 Tbsp. extra-virgin olive oil
freshly ground black pepper to
taste
1 tsp. dried oregano

Prepare the salad: Brush oil over a
baking sheet with sides. Arrange egg-
plant slices on prepared sheet. Preheat
oven to 450 degrees. Roast eggplant
until brown and cooked through,

about 8-10 minutes. Cool to room
temperature.
On a serving platter, arrange a few
of the eggplant slices. Sprinkle with
dried oregano and a touch of salt.
Layer the remaining ingredients over
the eggplant in order, sprinkling a
touch of salt over each layer, to make
a "stacked" salad.
Sprinkle the pine nuts and basil
over, and drizzle the balsamic vinegar
and olive oil. Finish with a few grinds
of black pepper and oregano. Makes 6
servings.

Barman Auster Feldman of West
Bloomfield, does not enter into the
exhibit but is part of Gilbert's book
and has been part of presentations that
inform people about the Holocaust.
She tells of the horrific hardships,
illness and dangers confronted while
escaping the Germans and the happi-
ness she found with her family in the
United States.
"I hope I have inspired others to
fight oppression:' she says.
Zvi Gitelman, professor of politi-
cal science and Judaic studies at the
University of Michigan, will discuss
"Soviet Jewish Partisans in WWII:
Fighting for Stalin or for the Jewish
People?" on Dec. 4 in Handleman Hall,
preceded by gallery tours at 6:30 p.m.
Gilbert's personal connection to
the Holocaust was through her late
grandmother, Millie Ron, who lived
in Southfield. The woman left Vilna
before the Holocaust took hold.
