2 cups flour
11/2 tsp. ground cinnamon
1 tsp. baking soda
1/2 tsp. ground nutmeg
1/2 tsp. ground ginger
1/2 tsp. salt
1/2 cup unsalted butter, softened
1 cup light brown sugar
2 large eggs
1 cup sour cream
3 cups peeled Granny Smith
apples

Crumble Topping:

1/2 cup light brown sugar
% cup flour
4 Tbsp. butter, softened

Preheat oven to 350 degrees. Spray
an attractive 9- x 13-inch (or equiva-
lent size) baking dish with nonstick

Sift together the flour, cinnamon,
baking soda, nutmeg, ginger and salt
in a medium bowl. Set aside.
In another bowl, use an electric
mixer to cream together the butter
and sugar until light and fluffy. Add
the eggs, one at a time, beating after
the addition of each. Mix in the sour
cream. Stir in the flour mixture until
just incorporated. Stir in the apples.
Transfer the batter to the prepared
baking dish.
In another bowl, combine the top-
ping ingredients, and use a large
spoon to stir well. Use your hands to
crumble the mixture over the cake.
Bake the cake until golden, about
45 minutes. Allow to cool for 1 hour
before cutting into squares and serv-
ing. Makes 12 or more servings.
