SWEET POTATO, GOLDEN
BEET AND ORANGE
TZIMMES
If you can't find golden beets, use
red beets, but cook them separately
in another roasting dish or they will
"dye" your tzimmes purple.
4 lbs. sweet potatoes, peeled and
cut into 2-inch chunks
3 lbs. golden beets, peeled and
cut into 2-inch chunks
4 seedless oranges, peeled and
cut into 1-inch chunks
'/2 cup balsamic vinegar
'/2 cup sweet red wine
3 Tbsp. olive oil
2 tsp. kosher salt
1 tsp. ground black pepper

1/2 tsp. ground cinnamon
1/2 tsp ground nutmeg

Preheat oven to 375 degrees.
Combine all of the ingredients in a
roasting pan or disposable aluminum
pan. Toss well, and spread the mix-
ture into as much of a single layer as
possible. Cover with foil, and bake for
1 hour. Remove the foil, and cook for
20 minutes more until the potatoes
and beets are very tender. Adjust
seasonings to taste. Keep warm until
ready to serve.
Makes 8-12 servings.

SPINACH AND KALE
MATZAH BAKE
2 Tbsp. olive oil + extra for bak-
ing dish
2 cups chopped onions
1 Tbsp. minced garlic
1 lb. fresh baby spinach (or
10-oz. frozen chopped spinach,
thawed and drained)
1 lb. fresh kale (large ribs
removed), chopped
4 cups matzah farfel
salt and pepper to taste
5 large eggs, lightly beaten
1 cup feta cheese
11/2 cups cottage cheese
'4 cup chopped fresh dill

Brush extra oil in a large (12-cup)
baking dish.
Heat the 2 Tbsp. oil in a large pot

4 Granny Smith apples, unpeeled
but cut into chunks
1 cup lightly toasted walnuts
1 /2 cup red wine
'4 cup honey

processer using a pulsing action (do
not process until smooth; it should

over medium-heat until hot. Add
onions and garlic, and saute for 3
minutes.
Stir in the spinach and kale. Cover
the pot, reduce heat to medium and
cook for 5 minutes. Stir in the farfel,
cover and cook for 5 minutes more.
Season with salt and pepper to taste.
Remove the pot from the heat, and
allow the mixture to cool for 10 min-
utes.
Add the eggs, cheeses and dill, and
stir well. Transfer the mixture to the
prepared baking dish. Place in the
oven and cook, uncovered, for 1 hour.
Spoon the mixture into a serving
bowl, breaking it into large chunks as
you go along. Serve hot, warm or at
room temperature.
Makes 12 or more servings.
