ccording to the official
website for the Super Bowl
XLVIII host committee, it is
"proud to host the first outdoor, cold
weather Super Bowl:'
I'm freezing just think-
ing about it, especially
given this winter's extreme
(to say the least) weather
history.
While I'm sure the com-
mittee has figured out how
to make it work, those
at home watching the
game will not experience
a moment of shivering as
the game unfolds (with all
those digital graphics that,
to this viewer, are super
amazing).
So as the Denver Broncos and the
Seattle Seahawks suit up and hit the
field, we'll gear up to feed hungry
football fans with snacks and such. By
the time Bruno Mars performs at half-
time, dinner will be served.
If you want to keep with the New
York theme (the game will be played
at MetLife Stadium in East
Rutherford, N.J., home
of the New York Jets and
the New York Giants),
serve hot dogs — grilled
or boiled, along with a
"condiment bar:' Simply
fill empty muffin tins with
your favorite toppings:
several mustard choices,
chopped onions, relish,
sauerkraut, etc.
For everything else on
the plate, check out the
recipes below. The choices
are eclectic but fun and a little bit
different, which is a win-win in my
book. ❑

SLOW COOKER CHUNKY
GINGER-CHICKEN CHILI
2 Tbsp. olive or coconut oil
11/2 pounds boneless and skinless
chicken or turkey breast meat, cut
into 1-inch cubes
2 Tbsp. flour
2 cups chopped onions
1 can (about 15 oz.) white
beans, such as cannellini or great
northern, drained
1 can (about 14 oz.) unsweetened
coconut milk
1 can (about 14 oz.) diced toma-
toes, with juice
water or chicken broth, as
needed
1 yellow or green bell pepper,
chopped
1 cup chopped celery
2 tsp. minced garlic
1 cup 'A-inch diced carrots
1 Tbsp. medium chili powder
1 Tbsp. fresh minced ginger
1 tsp. red chili flakes
kosher salt and pepper to taste
To serve:
hot pepper sauce, on the side
1/2 cup chopped scallions, white
and green parts (garnish)
1/2 cup fresh chopped cilantro
(garnish)
Pour the oil into large skillet over
medium-high heat. Add the chicken
and cook, breaking it up with a spoon
as it cooks, until just cooked through,
about 4-5 minutes. Add the flour, and
cook stirring for 1 minute more.
Transfer the chicken to the bowl of
a slow cooker. Add remaining ingre-
dients, and stir well. Add enough
water or chicken broth to just cover
the ingredients. Cook on high heat
for 6 hours, until thick and bubbly.
Adjust salt and pepper to taste.
Serve topped with cilantro and
scallions, with hot pepper sauce on
the side.
Makes 8 servings.
