>> sponsored by BUSCH'S ritesAtiodAwkier BEEF WITH SHIITAKE MUSHROOM BROWN RICE BOWLS Rice: 2 cups brown rice 6 cups water 1 Tbsp. canola oil 1 tsp. salt Broth: 6 cups beef or chicken broth 3 cups sliced fresh shiitake mush- rooms (or equivalent dried, recon- stituted) 1 cup chopped onions 2 Tbsp. minced peeled fresh gin- gerroot 1 tsp. minced garlic 1 Tbsp. hot pepper sauce, such as Tabasco Beef and mushrooms: 3 Tbsp. canola or vegetable oil 12 oz. sirloin steak or London Broil, trimmed, cut into thin 2-inch-long strips 1 Tbsp. Chinese rice wine or dry Sherry 1 Tbsp. soy sauce 1 can (8 oz.) sliced water chest- nuts, drained 1 tsp. sugar 1 cup chopped scallions (garnish) Prepare the rice: Combine the rice, water, oil and salt in a medium saucepan. Put the pot on the stove uncovered over high heat, and bring to a boil. Reduce the heat to a simmer, and cover with tight-fitting lid. Cook at a simmer for about 25 minutes. Turn off the heat and let the rice sit and steam for another 15-20 minutes until the water is absorbed. Fluff with a fork before serving. Prepare the broth: Have 6-8 large soup bowls at the ready. Combine broth, onions, ginger, garlic and pepper sauce in a large pot, and bring to boil. Cover, and reduce heat to low. Keep warm. Prepare the beef and mushrooms: Heat wok or large skillet over high heat until drop of water evaporates on contact. Add 2 tablespoons of oil and then the beef (spread to cover the bottom of the pan). Cook with- out stirring for 30 seconds, turn the beef over and stir-fry or saute for 30 seconds more. Stir in rice wine and soy sauce. Transfer to plate. Add remaining oil to same wok (do not clean) over high heat. Add mushrooms; stir-fry 1 minute. Add water chestnuts and sugar; stir-fry 1 minute. Stir in beef and any accu- mulated juices. Stir-fry 1 minute. To serve: Divide the rice among the bowls (you may not use all the rice). Top rice with the beef mix- ture and mushrooms. Divide broth among bowls, and sprinkle with scallions.
