ome years ago, I spent
Christmas in Venice, Italy.
It was a chilly,
soggy trip, where rains
resulted in a city covered
with raised platforms
above the narrow shoul-
ders along the canals.
While hot chocolate,
steaming soup with veg-
etables and rice, and hot
pasta helped me through
those frigid days, when
the calendar turned to
Dec. 25, I reminisced
longingly about my usual
holiday routine back in the States:
Chinese food and a movie.
My traveling companion and I

were lucky enough to find a Chinese
restaurant and fill our bellies with all
we could, topping the meal
off with gelato and sweet
cookies. I didn't get to the
movie, but I felt satisfied.
Now, especially here in
the U.S., we can find lots of
restaurants serving all types
of food — especially Asian
— open on Christmas Eve
and Christmas Day.
But if you're feeling
the cooking urge, try my
Fusion Asian recipes below.
They're pretty healthy alter-
natives to deep-fried take-out fare. If
you can find peppermint ice cream,
serve that, too.

CHINESE CHICKEN
SALAD

COCONUT CURRY
NOODLES

8 cups shredded Napa cabbage
2 cups bean sprouts
2 cups seeded,'/2-inch diced
cucumber
1 cup fresh cilantro leaves
1 cup shredded carrots
1 cup shredded red cabbage
1 cup chopped scallions, white
and green parts (optional)
1 cup roasted peanuts, salted or
unsalted
2 Tbsp. sesame seeds
3 cups boneless, skinless chicken
breasts, visible fat trimmed
Dressing:
'A cup soy sauce
'A cup red wine vinegar
3 Tbsp. sugar
1 Tbsp. fresh lime juice
1 tsp. minced garlic
1 Tbsp. grated fresh ginger
'/2 tsp. red pepper flakes

1 lb. (16 oz.) fresh Asian noodles
or fettuccini
2 Tbsp. canola oil
kosher salt and pepper to taste
2 cups chopped scallions
3 Tbsp. sesame seeds
Salt and pepper to taste
Dressing:
2 tsp. minced garlic
1 Tbsp. red curry paste
11/2 cups coconut milk
1 Tbsp. curry powder
'/2 tsp. turmeric powder
2 Tbsp. fresh lemon juice
2 Tbsp. soy sauce
2 Tbsp. melted honey

Combine all salad ingredients in a
large bowl. Set aside.
Whisk together the dressing ingre-
dients, and pour over the salad. Toss
well.
Makes 6-8 entree servings.

Cook the noodles according to
package instructions to al dente;
they must be firm, or they will break
when tossed with the dressing. Rinse
under cold water, and drain well.
Transfer to a large bowl. Add the oil,
scallions and sesame seeds, and toss
well.
In another bowl, whisk together
dressing ingredients, and pour over
the noodles. Toss well.
Add salt and pepper to taste.
Makes 8 entree servings.
