>> sponsored by Busy re-oriAa/kier WHITE CHOCOLATE- MACADAMIA-CRANBERRY COOKIES % cup (11/2 sticks) butter or mar- garine, softened % cup packed brown sugar % cup white sugar 1 tsp. vanilla 2 large eggs % tsp. baking soda 2 cups flour 1 cup white chocolate chips 1 cup dried cranberries 1 cup chopped macadamia nuts Preheat the oven to 350 degrees. Line 2 large baking sheets with parch- ment. Set aside. In a large bowl, cream together the butter, sugars and vanilla. Beat in the eggs and baking soda. Mix in the flour. Mix in the white chocolate, cranberries and nuts. Make a test cookie: Drop a heaping teaspoonful of batter onto a prepared baking sheet. Bake for 8-10 minutes. Watch how the cookie spreads. If the dough does not spread, you will know to press down on the remaining dough to make flatter cookies. If the cookie spreads too much, stir in a bit more flour (1 to 2 Tbsp.). Drop remaining dough by spoon- fuls onto the prepared baking sheets, and bake for 8-10 minutes until the edges are getting browned (these cookies should be soft). Makes about 3 dozen cookies. LIGHT PROCESSOR PUMPKIN CHEESECAKE Crust: 3 Tbsp. canola oil 2 cups graham cracker crumbs Filling: 11/2 cup (12 oz.) Neufchatel or fat- free cream cheese 3 cups (24 oz.) nonfat cottage cheese 2 cups pumpkin puree (canned is fine) 6 large egg whites 1 cup packed light-brown sugar '4 cup sugar 2 Tbsp. cornstarch 1 tsp. ground cinnamon % tsp. allspice '4 tsp. ground nutmeg '4 tsp. ground cloves 1 tsp. vanilla, maple or almond extract Make filling: Combine all filling ingredients in the bowl of a food processor, and pro- cess until smooth, scraping down the sides if necessary. Transfer the mix- ture to the crust-lined pan. Bake 90 minutes or until the center of cake no longer moves when shaken lightly. Shut off oven. Cool in oven for 2 hours. Remove from oven, and chill until ready to serve. To serve, run a thin knife around the sides of the pan, and remove collar. Cut the cheesecake with a thin, sharp knife. Makes 12 or more servings. Spray a shallow 2-quart (or 11- x 7-inch) glass or ceramic baking dish (or equivalent) well with nonstick cooking spray. Bring dates in water to a boil over medium-high heat. Reduce heat to sim- mer, and cook until very soft, about 5 minutes. Remove from heat, and cool. Prepare pudding: Use an electric mixer to beat together butter and brown sugar in a large bowl until fluffy. Beat in the eggs until combined. Add rice flour, baking powder and salt, and mix until just incorporated. Mix in the dates and water until uniform. Pour batter into pan, and bake until a toothpick inserted in center comes out clean, about 30-40 minutes. Make sauce: Melt butter in a medium saucepan over medium heat. Stir in the brown sugar and water. Bring to a boil over medium-high heat, and cook until the sauce is reduced and thickened. To assemble: Remove pudding from the oven, and poke with holes using a skewer, knife or chopstick. Slowly pour half of sauce evenly over hot pudding. Let stand until almost all of sauce is absorbed, about 20 minutes or more. Serve the pudding with remaining sauce spooned over. Makes 12 or more servings. Preheat oven to 325 degrees.
