Thanksgiving desserts.

11 desserts are fair game for
Thanksgiving. Any choco-
late concoction is perfect.
So are fruity treats —
especially apples, pears
and cranberries.
Of course, pumpkin
pie is a tradition. Still, we
all search, each year, to
out-do last year's sweet
endings. And since many
families have lots of com-
pany for this holiday, we
don't mind a dessert table
groaning with choices.
After all, many of us have
four-day weekends to
devour all the goodies.
For a change, try pumpkin in non-
pie desserts; here, we offer two pump-
kin recipes that are not pie. In fact,
there's not a pie among any
of these recipes.
Instead we have a cake,
comforting and tall, made
with olive oil and a real
maple-syrup glaze.
And cheesecake, the
same recipe I've been mak-
ing for years, with less fat
than usual. Toffee pudding,
so British, sticky and gooey,
but gluten free for a change
(a little goes a long way).
And cookies and bread
pudding — who needs dinner?

Cake:
3 cups flour
2 tsp. baking powder
1 tsp. baking soda
'/2 tsp. salt
2 tsp. ground cinnamon
1 tsp. ground nutmeg
'/2 tsp. ground cloves
% cup olive oil (not extra-virgin)
1 1 /4 cup brown sugar
'/2 cup sugar
5 large eggs
2 cups (or 1 15-oz. can) cooked,
mashed pumpkin
Glaze:
11/2 cup confectioner's sugar
3-4 Tbsp. real maple syrup
Preheat oven to 350 degrees. Spray
a tube pan (Bundt-type pan) well
with nonstick cooking spray. Set
aside.
In a large bowl, combine flour,
baking powder, baking soda, salt and
spices, and whisk well.
In another bowl, combine the oil
and sugars, and beat well. With the
motor running, add the eggs one at a
time, beating well with each addition.
Add the pumpkin and mix well.
Beat the flour mixture into the
pumpkin mixture, a little at a time,
until the batter is uniform. Transfer
to the prepared pan, and bake for
45-55 minutes, until the cake is set
and firm to the touch, or until a
wooden toothpick comes out clean.
Cool for 15 minutes in the pan
before turning the cake over onto a
serving dish. Cool completely before
adding the glaze.
Prepare glaze: In a small mixing
bowl, combine the confectioner's
sugar and the maple syrup. Whisk
until smooth.
Drizzle the glaze over the cooled
cake.
SWEET COCONUT-
ALMOND BREAD
PUDDING
1 lb. challah loaf, cut into 1-inch
cubes
2 cups sweetened flaked coconut
1 cup sliced almonds
5 large eggs, lightly beaten
1 cup sugar
2 tsp. vanilla extract
2 cans (131/2-oz. each) coconut
milk
'4 tsp. salt
'4 tsp. ground nutmeg
Garnish:
confectioner's sugar
Preheat the oven to 350 degrees.
Spray an attractive, shallow 2-quart
or equivalent glass or ceramic baking
dish with nonstick cooking spray. Set
aside.
Combine all the ingredients
in a large bowl, and use a rubber
spatula (or your clean hands) to mix.
Transfer to the prepared baking dish,
and allow mixture to sit for 15 min-
utes before baking. Bake for 45-55
minutes, until the pudding is golden
and set.
Dust with confectioner's sugar.
Serve warm or at room temperature.
