hanksgiving! This year, we're presenting three
weeks of recipes — for side dishes, desserts
and Thanksgivukkah (the only time in our
lives we will ever celebrate Thanksgiving and Chanukah
together!). This week we focus on the sides — the
foods you'll serve along with that big turkey, whichever
way you prepare it.



SPINACH SALAD WITH
FENNEL, ROASTED PEAR
AND ONION
Salad:
10 oz. baby spinach salad
1 English, or seedless, cucumber
Roasted Pears/Fennel/Onions:
2 firm but ripe pears, any variety
1 fennel bulb (about 8-10 oz.),
stalks trimmed, cored and thinly
sliced
1 medium onion, cut into'/2-inch
chunks (about 1 cup of onions)
2 Tbsp. extra-virgin olive oil
1 tsp. sugar
1 tsp. kosher salt
'/2 tsp. freshly ground pepper
Dressing:
'/3 cup extra-virgin olive oil
' cup red wine vinegar
1 Tbsp. grainy Dijon mustard
2 Tbsp. honey

Preheat oven to 400 degrees. Line
a large rimmed baking sheet with
parchment. Set aside.
Quarter unpeeled pears, and cut
out the core of each quarter. Cut
the pears into'/2-inch cubes, and
transfer to a large bowl. Add fennel
and onions, oil, sugar, salt and pep-
per, and use your hands to toss well.
Arrange in a single layer, and roast
for 20 minutes. Remove from the
oven, and cool.
Combine dressing ingredients in a
bowl, and whisk well.
Combine spinach, cucumber and
the roasted pears, fennel and onions
in a large bowl.
Drizzle half the dressing over, and
toss well. Add more dressing and
additional salt and pepper to taste.
Makes 8 servings.

BAKED CORN FLAN
1 lb. frozen corn kernels, thawed
1 cup finely chopped onions
2 Tbsp. granulated sugar
1 tsp. salt
2 cups milk or nondairy "milk"
or "creamer"
5 large eggs
% cup butter or margarine,
melted
'/2 cup flour
1 tsp. salt
% tsp. white pepper
% tsp. ground nutmeg
pinch of ground cayenne pepper

Preheat oven to 350 degrees. Spray
a shallow 2-quart baking dish with
nonstick cooking spray.
Place the corn in the bowl of
a food processor, and pulse until
ground, but not smooth (it should be
chunky). Transfer the corn to a large
bowl. Whisk in remaining ingredi-
ents, and transfer to the prepared
baking dish. Bake for 40-50 minutes
until just set.
Makes 8 servings.

SPICED SWEET
POTATO WEDGES
3 lbs. unpeeled sweet potatoes,
cut into 1/2-inch wedges
3 Tbsp. extra-virgin olive oil
1 to 2 tsp. smoked paprika (to
taste)
1 Tbsp. dried parsley flakes
1 tsp. granulated garlic
1 tsp. kosher salt
V2 tsp. freshly ground pepper

Preheat oven to 425 degrees. Line
a rimmed baking sheet with parch-
ment or aluminum foil. Set aside.
