1 large butternut squash, peeled,
seeded and cut into 2-inch wedges
4 sweet potatoes, peeled and cut
into 2-inch wedges
3 yellow onions, peeled and
thinly sliced
1 (4-inch) piece ginger, peeled
and julienned
5 Tbsp. olive oil
1 Tbsp. kosher salt
'/2 tsp. freshly ground black
pepper
Preheat the oven to 400 degrees.
Line a baking sheet with parchment
paper.

LEMON BARS
Lemon bars are traditionally made
with a shortbread crust and a rich
lemon-curd topping. With animal
cracker crumbs, plenty of fresh
lemon, and lots of ingenuity, this
updated version measures up in every
way to the original.
2 /3 cup + 2 Tbsp. all-purpose flour
1/2 cup animal cracker crumbs or
vanilla wafer crumbs
1 cup + 2 Tbsp. sugar
3 Tbsp. unsalted butter or mar-
garine
2 large eggs
2 egg whites
2 tsp. grated lemon zest
1/2 cup fresh lemon juice (from
about 4 lemons)

butter in a medium bowl until the
consistency of wet sand. Pat evenly
into the pan to form a crust. Bake

Whisk together the remaining 1
cup sugar and the remaining 2 Tbsp.
of the flour in a medium bowl. Add
the eggs, egg whites, lemon zest and
lemon juice, and whisk to thoroughly
combine, about 1 minute. Pour over
the hot crust, return to the oven and
bake until golden and set in the cen-
ter, about 30 minutes. Cool complete-
ly on a rack. Lift out the bars, holding
on to the foil ends, and place on a
cutting board. Cut into 16 squares.
