To make Cayenne Candied-Almond
Nails:
Combine all almond ingredients in
a small bowl, and toss or stir well.
Preheat oven to 325 degrees. Spread
mixture in a single layer on a foil-
lined baking sheet that's been sprayed
with nonstick cooking spray. Bake
for 20-25 minutes. Separate almonds
with a fork, and cool.

Halloween arrives next Thursday,
on Oct. 31, and for many, it's just a fun
reason to entertain and eat way
too much candy and "themed"
foods.
Today, one can spot black and
orange tortilla chips at the super-
market, along with spidery cook-
ies and other scary confections.
Still, I like "real" food that's
fun and thematic. So, I've created
some recipes I've actually made
for Halloween parties. Even if
you forgo the clever names and
scary garnishes, these recipes
stand on their own as just good
eating.
However you feel about promoting
or admonishing the celebration of this
holiday, at least you can eat well.
Salmon Fingers:
2 lbs. boneless and skinless salm-
on fillets
drizzle of olive oil
salt and pepper to taste
hoisin sauce for drizzling, in a
"squeeze bottle" (available at most
supermarkets)
Cayenne Candied Almond Nails
3 Tbsp. sugar
1 Tbsp. water
1/2 tsp. ground cayenne pepper
1 cup whole almonds
few drops of red food dye

friends who mean no
disrespect.
Yes, we do have
other occasions to
don costumes and
act silly — Purim
comes quickly to mind. But, with
Halloween, any religious aspects are all
but unknown to most Americans. The

To make Salmon Fingers:
Preheat oven to 450 degrees. Line
a baking sheet with parchment, or
spray well with nonstick cooking
spray. Set aside.
Cut the salmon into thin "fingers"
(not too small — they will shrink
when cooked), and arrange on the
prepared baking sheet. Drizzle with
olive oil, and season lightly with salt
and pepper. Roast for about 8 min-
utes until just cooked through (don't
be tempted to overcook these).
Squeeze the hoisin sauce into lines
where the "finger joints" would be.
Place dots of hoisin sauce where the

1 can (28 oz.) plum tomatoes
with juice
1 can (6 oz.) tomato paste
1 /3 cup olive oil
1 /2 cup finely chopped onion
1 tsp. minced garlic
1 /2 cup white wine
2 Tbsp. dried parsley flakes
1 tsp. dried oregano
salt and pepper to taste
Beefy Eyeballs:
1 lb. lean ground beef
1 lb. ground veal
1 tsp. minced garlic
