Now that we're
officially between
the holidays — with
Thanksgiving and
Chanukah just eight
weeks away — it's time
to take a vacation.
While all of us can't
just drop everything and fly down
to the Mexican Riviera, we can take
a little trip there if we change up the
menu in our kitchens.
While Mexican food can, and often

is, gourmet, with complex concoc-
tions that include hominy and corn,
rich and aromatic stews, exotic herbs
and the fusion of native
foods with European culi-
nary transplants, we tradi-
tionally (or stereotypically)
consider foods served with
tortillas to be "typically
Mexican:'
The following recipes
have all those flavors we
crave: spicy meats wrapped
in floury warm tortillas, my
famous (at least with those
who know me) guacamole,
savory Spanish rice and
refried black beans.
Your meal is already planned. Start
with some Mexican beer, and you're
set to say "Si" to south of the border
flavors.

GRILLED BEEF FAJITAS
Serve with warm tortillas, salsa and
guacamole. For variety, try substitut-
ing boneless and skinless chicken
breasts for the beef (marinate chick-
en no more than 8 hours, and cook
it through, but only just through —
don't overcook!).
3 lbs. flat iron steak, skirt steak
or London broil, trimmed of excess
fat
3 Tbsp. olive oil
1 /3 cup fresh lime juice
2 Tbsp. minced garlic
3 tsp. kosher salt
1 tsp. red pepper flakes
1 tsp. ground pepper
2 tsp. ground cumin
2 red bell peppers cut into thin
slices
2 green peppers cut into thin
slices
2 large onions, peeled and cut
into very thin wedges
3 large tomatoes cut into thin
wedges
3 Tbsp. olive oil

ceramic baking dish (or marinating
pan). Drizzle with olive oil and juice.
Use your hands to rub the garlic,
salt, pepper flakes, ground pepper
and cumin into the surface of the
beef. Cover well, and chill for 8 or
more hours (up to two days before),
turning the meat once or twice.
Heat grill to high (the grill must
be very hot). Tear 2 sheets of heavy-
duty foil (about 24 inches), and
stack one on top of the other. Toss
together peppers, onions, tomatoes
and olive oil in a large bowl, and
arrange in the center of the foil. Lift
the sides of the foil, and form into a
long, well-sealed packet. Place on a
cooler part of the grill, and cook for
20 minutes.
Meanwhile, place the beef on the
hot grill, and cook for 5 minutes on
each side (do not overcook, or the
beef will be tough). Remove from
grill, and let sit for 8-10 minutes
before slicing into thin slices against
the grain.
Serve with tortillas and the grilled
vegetables.
Makes 6-8 servings.
