APPLE-PIE CREAM- CHEESE NOODLE KUGEL Note: I have made this recipe with nondairy "cream cheese" and "sour cream" or "yogurt" with great suc- cess. 8 oz. regular or low-fat cream cheese (do not use fat-free), room temperature 2 cups regular or low-fat sour cream '/2 cup sugar 4 large eggs 1 lb. wide egg noodles, cooked al dente according to package direc- tions and drained (do not rinse) 1 20-22 oz. can apple pie filling 1 cup white or golden raisins 1/2 tsp. ground cinnamon Topping: 2 cups corn flake crumbs 1 Tbsp. sugar 4 Tbsp. melted butter or marga- rine Preheat oven to 350 degrees. Spray a 9- x 13-inch glass or ceramic baking dish, or equivalent, with nonstick cooking spray. Set aside. Combine cream cheese, sour cream and sugar in a large bowl. Beat with an electric mixer until creamy. Beat in the eggs until smooth (you may also combine these ingredients in a food processor, and process until smooth). Stir in the noodles, pie filling, raisins and cinnamon until incorporated. Transfer the mixture to the prepared baking dish, and set aside. Combine the topping ingredients in a medium bowl, and stir well. Sprinkle this mixture over the kugel. Bake for 1 hour until the mixture is set and the kugel is golden. Allow to cool a bit before cutting into squares and serving. Makes about 20 servings. THREE-COLOR BABY-POTATO ROAST Note: If the baby potatoes or finger- lings are very tiny, no need to halve them % cup olive oil 4-5 lbs. baby potatoes: a combi- nation of white fingerlings, yellow fingerling or baby redskin pota- toes, and baby purple potatoes, halved 2 Tbsp. minced garlic 1 tsp. smoked paprika (or regular paprika if you can't find smoked) 4 Tbsp. fresh rosemary leaves or 1 Tbsp. dried rosemary 1 tsp. kosher salt '/2 tsp. freshly ground pepper Heat oven to 425 degrees. Place all the ingredients in a large bowl, and toss well. Transfer to a roasting pan or disposable aluminum pan. Roast uncovered for 30 minutes, turning once during the roasting. Adjust salt and pepper to taste. Serve warm or at room temperature. Makes 8-10 servings.
