Get Ready For The Holidays!

Elwin and Co. expands offerings beyond the scone.

Hungarian Cabbage Strudel
(Dairy; serves 8-10)
Tip: Prepare the strudel the day prior to
serving. Slice when cold and reheat!
Ingredients:
2 large white cabbages, shredded
1 large onion, halved & sliced
thin
1 package fresh phyllo dough
1/ 2 lb. (2 sticks) unsalted butter
(divided)
1/ 2 cup breadcrumbs or matzah
meal
3 /4 cup Parmesan cheese
kosher salt & black pepper to
taste
3 cups mashed potatoes (at room
temperature)
1 cup grated Swiss-type cheese
(Jarlesberg)
1 egg mixed with 2 Tbls.
half & half
2 tablespoons poppy seeds

Using a heavy saute pan, heat half of
the butter until it bubbles. Add the
cabbage and onions, and cook over
medium-high heat, stirring occasion-
ally until soft, golden and lightly cara-
melized.
Mix the potatoes, cooled cabbage
mixture and Jarlesberg cheese in a
medium bowl, combine thoroughly.
Place the bread crumbs, Parmesan
cheese and remaining butter (melted)
in separate small bowls.
Working quickly, remove one phyllo
layer from the package — keep the
package covered with the towel. With
a pastry brush, dot the phyllo sheet
with melted butter, sprinkle evenly
with some of the cheese, then the bread
crumbs. Continue in this manner, care-
fully placing each sheet on top of each
other using six of the sheets. Be careful
to work quickly as not to dry out the
phyllo dough.
With a portion scoop, place six gen-
erous scoops of the cabbage mixture
along the long side of the phyllo sheet
closest to you. Gently roll away from
you creating a log — making sure the
seam is on the bottom when you are
finished. Using your thumb and fore-
finger, tuck the edges inside the roll to
contain filling.
Brush the top and sides of the strudel
with the egg mixture; sprinkle with
poppy seeds and cheese.
Bake in a preheated 350-degree oven
for 15 minutes or until golden brown.
Slice with a serrated knife.

launched Chef Elwin Greenwald's
business 22 years ago, but his
bakery, Elwin and Co., has thrived for two
decades with an ever-expanding list of
homemade products.
Although the scones were the focus of
Greenwald's first restaurant in Royal Oak,
his current location in Berkley now offers
bakery items, prepared foods, gift baskets
and more.
Greenwald, who studied cooking in
Annecy, France, describes his dishes as
"comfort food with a French chef's take"
Some of Elwin & Co.'s newest products
include seasonal soups, frozen entrees,
shivah trays and specialty catering options.
"People just can't get enough of it"
Greenwald said. "The more we make, the
more we sell. I'm very proud of what we do"
Some of the bakery's most popular soups
are its award-winning chicken soup, split
pea soup, Hungarian vegetable barley and

the 8-ounce size, although many of the top-
selling soups are sold by the quart. Among
the bakery's top-selling 14-ounce entrees
are chicken pot pie, blintzes, several types
of macaroni and cheese, and feta and spin-
ach pie.
Over the years, Greenwald has developed
a strong intuition about which products
will be successful. "I have more ideas than I

A variety of sweet and savory trays,
including the shivah trays, as well as gift
baskets, feature items such as cookies,
brownies, breads and teas. And, of course,
Greenwald's scones continue to be a top
seller with favorites such as onion poppy
seed and apple cinnamon.
"We use real ingredients, and our cus-
tomer can taste that everything is home-
made," Greenwald said. "Our customers are
loyal because they can count on us for qual-
ity, consistency and personal service. People
love quality at a fair price"
Many of Elwin & Co.'s products can also
be found at area grocery stores, including
Hiller's, Holiday Market, Long Lake Market,
Westborn and Whole Foods.

Special Offerings
Greenwald and his team often provide cus-
tom meals for groups of 15 to 20 people.
Customers will ask Greenwald to reproduce
a favorite recipe or meal, such as their grand-
mother's classic dishes or a complete meal
reminiscent from the turn of the past cen-
tury. These "heritage" dinners also include
cooking demonstrations featuring the
requested dishes as well as detailed recipes to
take home. Upon request, heritage dinners
can be prepared in a family's kosher home.
Clearly, Greenwald is eager to share his
skill and knowledge with others. The Elwin
& Co. website features a number of how-to
videos, along with recipes and cooking tips.
Soon, Elwin & Co.'s products may
become known outside of the Metro Detroit
area. Greenwald and his team are work-
ing to grow the company's wholesale and
commercial accounts on a national scale.
The company has already secured several
accounts for its baked goods, including
scones and coffee cakes.
A key to Elwin & Co.'s success has been
its loyal employees. Several employees have
been with the company since its early days.
"We have great employees who are very
dedicated" Greenwald said.
Greenwald oversees the operations of
Elwin & Co. When he's not at the bakery, he
teaches, lectures and travels. In addition, he
is currently working on a book combining
his favorite things: cooking, travel and art.
Greenwald and his partner live in Royal
Oak and are members of Congregation Shir
Tikvah in Troy.
