just can't get enough of this warm
weather! It's so beautiful I want to
eat outside every night just as the
evening is beginning to cool down.
With the longer days, it's just so
easy to entertain small
groups elegantly with only
a few select menu offer-
ings perfectly prepared.
So on this week's menu
is dinner for six — al
fresco. I like to start with
a salad, or in this case, a
salad in a glass: gazpacho,
but with a twist. Mine is
made with watermelon
and garnished with tart
feta cheese and pine nuts.
Alongside, if I haven't
already served various appetizers, I
like to include a savory shortbread
cookie filled with Parmesan and fresh
thyme. They're crunchy and buttery,
but because they're not sweet, they
serve as a perfect accompaniment for
the salad-in-a-glass.

Moving on to the main course,
nothing is showier (or easier) to cook
than whole fish on the grill. With
some of the work already done by
your fish seller, simply seasoning the
fish inside and out and
slapping them on the grill is
all that's required. And folks
are always impressed by the
presentation. A drizzle of
olive oil is all that's needed
to finish this dish.
If grilling the fish directly
on the grill seems scary (it's
not), place the fish in a boat
of greased foil and place
the foil boat on the grill.
Close the top of the grill (or
entirely wrap the fish in the
foil), and cook the fish without turn-
ing for 20 minutes. Allow to stand for
a few minutes before serving.
On the side is everyone's favorite
non-grain: quinoa. Served with corn
and fresh cilantro, this dish becomes
more south-of-the-border.

PARMESAN AND THYME
SHORTBREAD
This recipe came to me from a book-
club friend. It's fabulous for summer
entertaining and is a wonderful appe-
tizer all by itself or served alongside a
chilled soup or salad.
'/2 cup unsalted butter, room tem-

beat with a mixer on medium speed
until creamy. Add the remain-
ing ingredients, and mix until just
combined. The mixture will appear
crumbly.
Transfer the mixture to the plastic
wrap, and use your hands to form
it into a log about 2 inches in diam-
eter. Wrap the log, and roll it to be
perfectly cylindrical. Chill for several
hours for up to two days.
Preheat oven to 350 degrees. Line
a baking sheet with parchment.
Unwrap the log, and slice it into
1/2-inch-thick circles. Arrange the
circles on the prepared baking sheet,
and bake for 18-22 minutes. Allow to
cool completely before removing the
shortbread.
Store in an airtight container
for up to two weeks. Makes varied
amounts of shortbread.
