Heat butter in a large nonstick skillet over medium-high heat until it starts to brown. Add as many fillets as fit in the pan (do not crowd), and cook on both sides until golden. Set the cooked fillets on a dish, and set aside. Cook remaining fish in the same way (no need to add more butter), and add to the dish when golden (the fish does not need to be cooked through). To the empty pan (do not clean the pan), add the wine, lemon juice and cheese, and bring to a boil, whisking all the while. Add all the fish back to the pan (you can stack it), and heat through.
