and Parmesan cheese over the pota-
toes, and cook for 15 to 20 minutes
more or until the potatoes are tender.
Sprinkle with paprika and serve.
Makes 6 servings.

BUTTERSCOTCH
POTS DE CREME
Recipe adapted from the Los
Angeles Times, inspired by Gjelina's
in Venice, Calif. You will need 8 to10
6-oz. ramekins or custard cups for this
recipe. Or, you can make the recipe in
a ceramic souffle or quiche pan.
9 egg yolks
2 tsp. vanilla paste (or vanilla
extract)
6 Tbsp. butter
11/2 cups dark brown sugar
Ph tsp. salt
3 cups whipping cream (not
whipped)
boiling water

Preheat oven to 325 degrees.

Whisk the egg yolks and vanilla
until smooth, and set aside.
Melt butter in a medium saucepan
over medium heat. Once the butter is
melted, whisk the brown sugar and
salt into the butter. Cook stirring with
a spoon until the sugar becomes deep-
er in color, about 5 minutes. Slowly
whisk in the cream, and continue
whisking until the mixture is smooth.
Remove from the heat, and whisk
about 1 cup of the butter/sugar/
cream mixture into the eggs. Add the
remaining butter/sugar/cream mix-
ture, and whisk until incorporated.
Divide the mixture among the
ramekins or custard cups. Place them
in a baking dish, and pour boiling
water in the pan to reach halfway up
their sides. Cover the baking dish
with foil, and bake for about 40 min-
utes until the tops are set.
Remove from the oven to cool.
Cover and chill until an hour before
serving. Serve the pots de creme at
room temperature.
Makes 8-10 servings.

Frank, who has taught art enrich-
ment in Michigan and New Jersey
school systems, primarily works out of
a home studio. She does more compli-
cated enameling at a machine shop in
Allen Park.
Art management comes into play as
she joins forces with almost 30 artists,
who together operate the Lawrence
Street Gallery to avoid overhead costs
as they sell their works.
"I like to paint in complete quiet,"
says Frank, active in Temple Kol Ami
in West Bloomfield with her husband,
Sidney. "Sometimes, my paintbrush
takes over and directs me.
"I think of my current collage style
as influenced by old-fashioned, paper-
doll cutouts. I've dressed the series of
whimsical ladies in different garments
as they are shown in different scenes.
"One is blowing a fluted instru-
ment (Miss Nomer: Rosa Petal and Her
Flute), and one is holding an urn (Miss

"One piece in my show has a figure
holding up a happier face,' Frank says.

is a brighter side to whatever difficult
circumstances we may be facing"
