EMPIRE

Season to taste with salt and pepper.
Cover, and chill until ready to
serve. Just before serving, add the
parsley, and toss. Adjust salt and
pepper to taste, toss again and serve.
Makes 6-8 servings.

SMOKED SALMON,
MUENSTER, AVOCADO
AND TOMATO PANINI
6 small ciabatta rolls (or 12 slices
rye bread)
12 slices Muenster cheese
12-16 oz. thinly sliced smoked
salmon
2 avocados, cut into thin wedges
2 medium tomatoes, cut into thin
slices
fresh basil leaves, optional
olive oil for brushing on the cia-
batta

Preheat panini press (if you don't
have a press, you can cook these in a
skillet, grilled-cheese style).
Split the ciabatta rolls in half
horizontally. Make a sandwich of the
ingredients, starting with 1 slice of
cheese on the bottom piece of the
ciabatta. Layer the following ingre-
dients, and end with a second slice
of cheese. Top with the top piece of
the ciabatta. Brush both sides of the
ciabbata with olive oil, and place one
sandwich on the panini press.
Close the panini press, and cook
until the bread is golden and crisp
and the cheese is melted, about 5
minutes. Keep the sandwiches warm
in a 200-degree oven while you pre-
pare the remaining sandwiches.
Cut the sandwiches in half diago-
nally, and serve.
Makes 6 panini.

"After graduating, I worked as a

research assistant in history for a
professor and co-wrote an article
on the history of social welfare in
Massachusetts," says Yashinsky, who is
single and enjoys playing the banjo and
listening to folk and blues when he is
away from opera.
"I thought my grounding in his-
tory gave me an understanding and
appreciation of opera, the origins and
its creators, and I emailed MOT asking
if they had any positions available in
production.
"They had a position open as assis-
tant director of The Barber of Seville.
I came back to Michigan for that and
since have gotten other responsibilities
at the opera house'
Yashinksy will be part of a market-
ing effort that involves community
engagement through small concerts
and lectures.
"I'm always inspired by the memory

of my grandfather and the conversa-
tions I have with my grandmother:'
he says. "She has as much spirit and
vibrancy as ever, and her house is filled
with books on theater and acting.
"They appeared often on The Lone
Ranger in its original form as a radio
drama in Detroit. He usually was some
gruff-voiced villain, and she was a
damsel in distress. In truth, they were
anything but, and that's acting!"



The Happy Prince will be
performed at 2:30 p.m. Sunday,
April 28, at the Detroit Opera
House,1526 Broadway ($30
adult; $15 child). The open dress
rehearsal is at 11 a.m. Friday, April
26, when single tickets will be
available only at the box office
