The New Jewish Table

W

hen Todd Gray, who grew
up Episcopalian, married
Ellen Kassoff Gray, the
aspiring chef with a passion for fresh
seasonal American ingredients was
introduced into the world of Eastern
European Jewish cuisine. The couple's
new cookbook, The New Jewish Table:
Modern Seasonal Recipes for Traditional
Dishes (St. Martin's Press; $35), explores
the melding of those two different cook-
ing cultures in its 125 recipes, reinvent-
ing traditional Jewish cooking with fresh
seasonal ingredients and innovative
approaches to traditional Jewish dishes.
In 1999, the couple opened the
acclaimed Equinox Restaurant in the
nation's capital near the White House.
The book's recipes, often served at the
restaurant, are divided by the four sea-
sons, each with six chapters — Brunch,
Starters, Lunch, Dinner, Sides and

Desserts — and with
menu suggestions for
holidays including Rosh

Chanukah and Passover.
The cookbook also
includes background commentary from
the couple, full-color photographs and
sidebars from Washington, D.C., elites.

Fish; Todd's Modern-Day Brisket;

Salad (a great dessert after a big meal);
and Apricot Hamantaschen (substitute
ground blanched almonds for flour, omit
