ROASTED PEARS WITH
POMEGRANATE-ORANGE
GLAZE
Serve alone or with fresh whipped
cream or cinnamon ice cream.
6-8 firm but ripe Bosc or
Danjou pears, peeled, stems
intact
olive oil (not extra virgin)
1 cup sugar
Glaze:
pomegranate syrup
1 cup dry white wine
1 cup pomegranate juice or
nectar
1 /2 cup sugar
grated zest of 1 orange
1 cinnamon stick
Garnish:
fresh pomegranate arils
(seeds)

Preheat oven to 350 degrees. Using
a small melon baller, scoop out the
cores of the pears from the bottoms
(go about halfway up the pears — not
all the way to the stems). Slice a small
amount from the bottoms of the pears
so that they can stand upright in a
baking dish. Rub the pears with oil,
and roll them in the sugar to coat.
Bake the pears for 1 hour.
Combine glaze ingredients in a
small saucepan over medium-high
heat. Bring to a boil, reduce heat
to simmer and cook until the glaze
reduces by half. Set aside.
Serve the pears warm or at room
temperature with pan juices drizzled
over and the pomegranate glaze
spooned over. Garnish with fresh
pomegranate arils (seeds). Makes
6-8 servings.
