The zip sauce at Giulio's is prepared without butter for use on items like its 14-ounce New Yorker steak ($16.95) ... And its shrimp scampi is without cream ... In keeping with the Giulio standard of fair pricing, its serving of four lamb chops rubbed with olive oil, rosemary and oregano is $23.95. Co-owner with Giulio Ledda, Stewart Fox may be recognized as the onetime former waiter and chef of 13 years at Moro's Dining in Allen Park ... Also formerly at Moro's, Martin Garza, who started there as a busboy and became a Moro's chef, now heads the kitchen at Giulio's. Smiling waitpersons are important, too ... Like Carolyn Romano, formerly at Ginopolis, Steve & Rocky's and John Laffrey's Steaks on the Hearth ... And Angela Bain, former bartender and server at Andiamo Novi. With a cash loan from Irwin Cohn, Sam Boesky, one of the partners, became sole owner by buying out Cohn and John and Nate Lurie and it became one of America's most fabulous three- pronged delicatessen-restaurant and bar operations. After getting a liquor license, Darbys was enlarged to seat 475, feeding about 4,500 people daily and employing 120 people at the small lunch counter for the quick coffee-and-sandwich set, coffee shop for those with a little more time, a beautiful dining room for sumptuous din- ing and the Skylight Lounge. Darbys burned down July 15, 1968, while Sam was celebrating his birthday at a party in the home of his stepson and manager, Bernie Kerner ... At the time, it was doing $2.6 million yearly just in food, an astro- nomical number in those days. Some readers may remember Frank Meltzer, heading the deli; Executive Chef John Kreszni, waiters Bob Winkle and Herb Showalter, waitresses Marge Hall and Susan Heller, Helen Thomas, Kathie Franklin, Pat Smith, Marie Parrish and Dorothy Eason, among so many others ... And in the Skylight Lounge, pia- nist Charlie Dubin, bartender Tommy Chadwick and waitress Chris Lancaster. After the fire, Sam had about 15 offers to open another Darbys without putting in a dime, but turned them all down, and with Bernie, opened Darbys Stanley Steamer in Oak Park. Every day he was five, 15, 20 minutes late. But he was a good worker and a credit to the company who demon- strated its 'older-person-friendly' policies. "One day, the boss called him in for a talk. 'I like your work ethic, you do a bang- up job when you finally get here, but your being late so often is quite bothersome: "'Yes, I know, boss, and I am working at ... 'Good, you are a team player. That's what I like to hear: ... 'Yes sir, I under- stand your concern, and I will try harder.' "The manager commented, 'I know you're retired from the Armed Forces. What did they say to you there if you showed up in the morning late so often? "The elderly man looked down at the floor, smiled and said with a grin, 'They usually saluted and said, Good morning, Admiral, can I get your coffee, sir?"' OLDIE BUT GOODIE DEPT.... O'Brien kept asking Cohen to let him play at his Jewish country club ... Cohen told him that only Jews could play golf there ... Cohen finally gave in but warned him that if anyone asks, his name was Goldberg, and if anybody asks, that he was a manu- facturer ... O'Brien asked what kind of a manufacturer should he be and Cohen told him to say that he made tallises. Sure enough, after playing 18 holes, he is approached by one of the members who asked his name ... "My name is Goldberg" said O'Brien ... "What do you do for a living, Mr. Goldberg?" ... I'm a manufac- turer" replies O'Brien ... "What do you make?" ... "I make tallises" ... "You know" said the member, "I always wanted to know what the Hebrew letters on the neck of the tallis meant.
