ealtime in Tina
Wasserman's childhood
home was a glorious expe-

rience.
It might be pot roast, juicy and
rich with herbs, or chicken soup so
flavorful you couldn't help but sigh at
the first bite. And each family mem-
ber had his or her own salad bowl,
with a radish carved into the shape
of a rose.
"My mother grew up during the
Depression, and she treated food
with reverence:' Wasserman says —
which probably helps explain the
famed Jewish chef's own passion for
getting food right.
Wasserman, food columnist for
Reform Judaism magazine, will
speak about her cookbook Entree
to Judaism: A Culinary Exploration
of the Jewish Diaspora and pres-
ent a kosher food tasting at 7:30
p.m. Wednesday, Aug. 29, at the
Jewish Community Center in
West Bloomfield.

Wasserman
graduated with a
master's degree from
New York University,
worked for a caterer
(once making 1,000 delicious
rugelach and spanikopita in one
go), married and had two children,
and became known as one of the
country's finest chefs, appearing on
Good Morning America and writing
columns for the Washington Post and
the Dallas Morning News.
Wasserman loves the stories

behind the recipes (she will reveal, at
her JCC presentation, the real story
about eating lathes on Chanukah)
and discusses in her book the way
Jewish emigration, or forced expul-
sion, shaped the way everyone eats.
A member of the
international cull-
NISN1nary society Les
Dames d'Escoffier,
L
Wasserman loves
both baking and
cooking, though
her approach to
the two is very
different.
With cook-
ing, she writes
precise recipes
but is flexible
in her own
preparations.
With baking, "I'm
rigid." She's famous for telling stu-
dents, "Wait, wait a second!" before
they toss an almost-cup or a little-
more-than-a-cup of flour in for a
cake. (The only exception: vanilla —
because "you can never have enough
vanilla.")
