BUSCH'S' >> sponsored by Aes4 oodAalkier STRAWBERRIES WITH SWEET RICOTTA, HONEY AND BALSAMIC GLAZE BALSAMIC PECAN CHERRY KALE SLAW Pecans: 1 cup pecan halves 1 Tbsp. olive oil 1 Tbsp. sugar Yom Kippur & Rosh Hashanah Cooking 1 lb. fresh strawberries, greens removed and berries halved (or quartered if very large) Toppings: 3 Tbsp. balsamic vinegar glaze or mousse (available at gourmet shops) 1 /4 cup honey, any variety Slaw: 1 lb. fresh kale, shredded or cut into thin shreds 1 red bell pepper, chopped fine I/4 cup dried sweetened cherries 1/3 cup balsamic vinegar 2 Tbsp. extra-virgin olive oil salt and pepper to taste Sweet Ricotta: 11/2 cups ricotta cheese 1 /4 cup white sugar 1 tsp. vanilla extract Prepare pecans: Heat oil and pecans in a large nonstick skillet over medi- um-heat. Saute the pecans for 1 min- ute. Sprinkle the sugar over, and saute until the nuts are golden. Assemble salad: Transfer the pecans to a large bowl, add remaining ingredi- ents, toss well and season to taste with salt and pepper. Serve immediately. IN hen Joanne Caras created her Holocaust Survivor Cookbook and its sequel, Miracles & Meals, a collection of stories and recipes collected from Holocaust survivors around the world, she had no idea how her life would change. To date, she has raised more than three-quarters of a million dollars for a variety of charities. The largest share has gone to Carmei Ha'ir, a soup kitchen in Jerusalem that feeds more than 500 poor people every day. Now, Caras is a network TV star. Her new show, Miracles & Meals with Joanne Caras, airs new episodes 9 p.m. Mondays on JLTV, the only 24-hour, seven-day-per-week network devoted to Jewish programming. The show is repeated six other times each week. Each show features Joanne pre- paring recipes from her cookbooks and then telling the stories of the sur- vivors who submitted the recipes.
