BROILED TOMATO SALAD
WITH ROASTED PEPPERS,
TUNA AND CAPERS

TOMATO
PASTA SALAD

FRESH

WHITEFISH

Wild Caught—Canada

6 large ripe tomatoes (about 21/2
lbs.), cut into 1/2-inch slices
2 yellow bell peppers
2 cans (61/2 oz. each) white tuna
in water, drained
2 Tbsp. drained capers
1 /4 cup extra-virgin olive oil
juice of 1 lemon
kosher salt and pepper to taste
1 Tbsp. fresh thyme leaves
1/2 cup fresh minced parsley,
garnish

Preheat broiler. Spray one or two
baking sheets well with nonstick
cooking spray. Arrange the tomato
slices on the baking sheet, and broil
in the middle of the oven for about
6-8 minutes, or until the tomato is
blackened in some spots. Set aside
to cool.
Reduce heat to 475 degrees, and
spray another baking sheet with
nonstick cooking spray. Cut the bell
peppers in half lengthwise, and
remove the seeds and stem. Arrange

baking sheet, and roast the peppers
for about 10-15-minutes, or until
the peppers are softened and the
skin is dark in spots. Remove the
peppers from the oven, and cool to
the touch. Use your fingers to peel
away as much of the skin as possi-
ble. Cut the peppers into thin strips.
Assemble the salad: Arrange the
tomatoes on a large ceramic or
glass platter. Break up the tuna and
sprinkle over the tomatoes. Arrange
the pepper strips over the tuna, and
sprinkle the capers over all. Drizzle
the olive oil and lemon juice over
the salad, and season to taste with
salt and pepper. Sprinkle the thyme
and parsley over, and serve the salad
at room temperature.
Makes 6 servings.

2 cups leeks (rinse leeks well,
slice into quarters lengthwise and
cut into Vs-inch pieces)
1 cup plain breadcrumbs
1 cup milk
1 cup grated Gruyere or other
Swiss cheese
4 large eggs
1 Tbsp. chopped fresh dill
kosher salt and freshly ground
pepper to taste

Preheat oven to 350 degrees. Spray
6 to 8 6-oz. ramekins, or small bak-
ing dishes, with nonstick cooking
spray. Set aside.
Bring a saucepan of water to a
boil over high heat. Add the leeks,
reduce heat and simmer until the
leeks are softened, about 10 min-
utes. Drain well, and cool.

Combine the cooled leeks and
all remaining ingredients in a large
bowl, and stir well. Let stand for 10
minutes. Transfer the mixture to the
ramekins. Place the ramekins on a
rimmed baking sheet (may be made
a day ahead and baked just before
serving). Bake ramekins for 20
minutes or until the bakes are puffy
and golden. Serve immediately (the
bakes will deflate quickly).
Makes 6-8 servings.
