Wars

A

ttorney Kelly Nigohosian,
founder of 313 Lawyers, has
hometown loyalty.
He's also a partner in a free-range
cattle ranch on the Hawaiian island of
Molokai and, by his own admission,
could afford to live and work anywhere.
Instead, he chose to bring better nutri-
tion to Metro Detroit by opening his
Southfield-based Salad Solutions res-
taurant in April.
Said Nigohosian, whose Jewish moth-
er, the former Adele Chesik, graduated
from Central High School, "Not every-
thing is for money."
Last October, Gary Trudeau (not
related to the cartoonist) opened The
Big Salad in Royal Oak.
Although Coney Island restaurants
have long included Greek salad
on their menus, Trudeau said;
"There were not too many
other places to get salad for
a healthy meal and nowhere
offering much variety"
At least, not until local
businessman John Bornoty
opened his first The Big Salad
in Grosse Pointe, followed by a
second in Troy. Then he gave
Trudeau the opportunity to
have a franchise.
These two bastions of
healthy eating are on different
sides of town. And so begins our "battle"
of the salad restaurants.

Philosophy: Nigohosian's favorite
lunch for decades in Downtown Detroit
was a Greenroom Restaurant salad.
"There was nothing comparable on this
side of town',' which is why he started
Salad Solutions.
"I feel my community needs green
food and to get away from products made
with white flour and high fructose corn
syrup',' he said.
Menu: Create-your-own salad from
long list of toppings. Choose one, or
combine iceberg mix, Romaine, spinach,
spring mix. Up to five items, $7.99, extra
charge for each meat and seafood; unlim-
ited items with one meat, $9.99; unlim-
ited items with two meats, $12.99. Family

Philosophy: Bornoty got the idea
for his specialty salad restaurant after
visiting a New York delicates-

in the corner that had wilted

they awkwardly tried to get

He envisioned staff creating
bowls of salad to the custom-
ers' exact specifications. The
seemingly limitless toppings
