REALLY EASY CAESAR
SALAD WITH CREAMY
DRESSING AND
HOMEMADE CROUTONS

Croutons:
2 cups dry bread (good quality,
not stale, such as a baguette), cubed
1 /4 cup olive oil
1 /4 fresh grated Parmesan cheese
2 tsp. dried parsley

Dressing:
1 /4 cup mayonnaise
2 medium peeled garlic cloves
1 Tbsp. Dijon mustard
juice from 1 lemon
1 Tbsp. Worcestershire Sauce
1/2 cup olive oil
1 /4 cup freshly grated Parmesan
cheese

Salad:
12-14 cups clean, dried and torn
Romaine lettuce
freshly ground pepper to taste
1 cup freshly grated Parmesan
cheese

Make croutons: Preheat oven to 350
degrees. Toss all ingredients together
to coat the bread cubes, and arrange
the bread in a single layer on a baking
sheet. Bake for 10-15 minutes, until
the croutons are golden. Set aside to
cool.
Make the dressing: Combine all
dressing ingredients in the bowl of
a food processor, and process until
smooth.
Make the salad: Toss half the dress-
ing with the Romaine lettuce leaves to
coat them completely. Add more dress-
ing as needed, to taste. Season the
salad with freshly ground black pep-
per. Add remaining 1 cup of Parmesan
cheese and croutons, and toss the
salad again.
Makes 6 servings.

friend. It's fresh and summery.

Lemon Curd:
1 /3 cup butter
2 tsp. grated lemon zest or peel
1 /3 cup fresh lemon juice
1 /4 tsp. salt
1 cup sugar
3 eggs, lightly beaten

Trifle:
1 prepared pound cake (about
16-20 oz.)
3 pints (6 cups) good quality
vanilla ice cream, softened
lemon slices and/or fresh mint
leaves, garnish

Make lemon curd:
Melt butter in the top of a double
boiler over gently boiling water. Add
zest, juice, salt and sugar. Thoroughly
whisk in the beaten eggs. Continue
whisking the mixture constantly until
thick and smooth (this may take up to
10 minutes). Remove from heat, and
cool thoroughly.
Assemble trifle:
You will be making three layers of
ingredients. Cut cake into 1/2-inch-
thick slices. Layer 1/3 of the cake slices
in an attractive glass bowl or trifle
dish (2-quart capacity). Add a third of
the softened ice cream, and top with
1 /3 of the lemon sauce. Repeat the pro-
cess two more times, ending with the
lemon sauce.
Cover the bowl with plastic wrap,
and freeze the dessert for several hours
or up to 2 weeks. Remove from freezer
15 minutes before serving, and garnish
with halved lemon slices, fresh mint
leaves or both.
Makes 12 servings.
