Gently cook the onion in the olive oil
in a large frying pan for 4-5 minutes,
stirring frequently until soft but not
colored. Stir in the refried beans. Add
the chopped tomato, and cook until
heated through. Season with salt.
Warm the taco shells according to
the instructions on the package, and
half-fill with the refried bean mixture.
Top with grated cheese and shredded
lettuce, then garnish with sliced avoca-
do, sour cream and a squeeze of lime
and lemon juice. If you like your tacos
spicy (which Sir Paul doesn't!), add 1-2
tsp. hot sauce to the tomato mixture.
