The essence of spring.

T

he weather in these parts has
been amazing. Trees are bloom-
ing early. Tulips are
dotting garden beds. Grass
is as green as green can be.
And its only the first week
of April. Restaurants opened
outdoor seating in March
with 80-degree temps
breaking records. We leapt
from the desire for warm
and comfy foods directly to
a yearning for salads, light
entrees and fruity desserts.
Yes, we are in the midst
of Passover, which begins
tomorrow evening. But
when all this chicken soup,
brisket and matzah eating is over, we'll

want light, summer foods way before
summer gets here.
So on this week's menu is
the essence of spring: baby
vegetables lightly sauteed
in olive oil; a light fish with
the fresh, bright flavors of
lemon and dill; a pavlova with
fresh berries on a light-as-air
meringue crust that adds
more menu sparkle.
The good news is you
don't have to wait until after
Passover to enjoy any of these
recipes because they're all
Passover friendly (substitute
Passover cream of tartar in
the pavlova or leave it out
entirely).

SEA BASS WITH DILLED
LEMON WINE SAUCE
1 1/2-2 lbs. boneless and skinless
sea bass, cut into 6 portions
salt and pepper to taste
1 cup white wine
3 Tbsp. fresh lemon juice (juice
from 1 lemon)
1 tsp. grated lemon zest (peel)
2 Tbsp. fresh, chopped dill
1 /4 cup fresh, chopped parsley
1 Tbsp. butter
Season fish with salt and pepper to
taste. Heat a large nonstick skillet coated
with cooking spray over medium-high
heat. Add fish to pan; cook 5 minutes on
each side or until fish flakes easily when

tested with a fork. Remove fish from
pan. Place on plates; keep warm.
Add wine and juice to pan. Remove
from heat, and stir in the zest, dill, pars-
ley and butter until the butter is melted.
Drizzle sauce over fish, and serve imme-
diately. Makes 6 servings.

FRESH BERRIES PAVLOVA
4 large egg whites
1 /8 tsp. cream of tartar
1 cup granulated sugar
1 tsp. vanilla extract
2 cups whipping cream, beaten
until stiff with 2 Tbsp. sugar
6 cups berries (sliced strawberries,
raspberries, blackberries or blueber-
ries — alone or in combination)
Preheat oven to 300 degrees. Line a
baking sheet with parchment. Set aside.
Using an electric mixer, beat egg whites
with cream of tartar in a large bowl
until soft peaks form. With the motor
running, add the sugar a little at a time,
until glossy peaks form. Beat in vanilla.
Spread the meringue into a 10-inch
circle on the baking sheet, with the
center slightly lower than the edges (to
make a very shallow meringue bowl).
Bake for 1 hour or until the meringue
is firm to the touch. Turn off oven, and
leave meringue in oven to dry. Gently
remove the disk from the parchment
and place on a serving platter (may be
made up to a day ahead).
Just before serving, spoon the
whipped cream over the meringue, and
top with fruit. Cut into wedges (like a
pie) and serve. Makes 8 servings.

SPRING VEGETABLE
SAUTE
2 Tbsp. olive oil
1 cup chopped onion
1 tsp. minced garlic
1 /2 tsp. red pepper flakes
1 Tbsp. fresh thyme leaves
1 medium yellow or red bell pepper
12 baby zucchini, halved lengthwise
1 pint grape tomatoes, halved
lengthwise
1 bunch (about 1 lb.) fresh aspara-
gus, cut diagonally into 1-inch pieces
kosher salt and pepper to taste
Heat oil in a large nonstick skillet
over medium-high heat. Add onion, gar-
lic and red pepper flakes, and saute until
softened. Add remaining ingredients,
and saute until tender but firm, about
6 minutes. Add salt and pepper to taste.
Makes 6 servings.
