Popovers should be a medium-gold-
en brown. To check if they're done,
pull one out of the pan, and break it
open; the interior should be mildly
moist but not soggy.
Remove the popovers from the
oven, and tilt them in the pan to cool.
This recipe will make 28 muffin-
size popovers, 15 standard popovers
or 30 mini-popovers.

6 Granny Smith Apples,
unpeeled and cored (about 2 lbs.)
2 cups walnuts halves, lightly
toasted in a 350- degree oven for
12-minutes
1 tsp. ground cinnamon
'A cup honey
1 /3 cup Passover red wine
Cut the apples into 2-inch chunks,
and place in the bowl of a food
processor. Add the remaining ingre-
dients, and pulse until chopped and
well combined (do not puree — you
should be able to see apple and nut
"bits"). Transfer to a bowl, cover and
chill until ready to serve.
Makes 12 servings.

BELLE HORDES'
IMBERLACH
This confection has a strong ginger
flavor. I had to guess at some of the
amounts, but this works to produce
a delicious honey-sweetened sticky
candy. It's amazing!
1 lb. matzah farfel
1 lb. chopped (not ground) wal-
nuts
2 lbs. honey
2 Tbsp. sugar
2 tsp. ground ginger (plus more
to taste)
2 Tbsp. PassoVer wine, any kind
Line a large rimmed baking sheet
with foil, and spray well with non-
stick cooking spray. Set aside.
Bring honey to a boil in a large
saucepan over medium-high heat.
Stir in the farfel, and cook until the
farfel appears lightly toasted. Stir
in the remaining ingredients, and
cook until the mixture is thick and
golden.
Transfer to the prepared pan (or
alternately, dampen a cutting board
and spread the mixture on it, about
3 /4-inch thick). Use wet hands to
press the mixture as flat as possible.
Sprinkle the top with more ginger,
if desired, and allow it to sit for
several hours. Cut into squares, bars
or diamonds. Store in an airtight
container.
Makes lots of imberlach.

FLOURLESS MOCHA
FUDGE TORTE
You may also make this torte in a
10-inch springform pan, but cook it
15 minutes less.
1/2 cup strong coffee
1 cup white sugar
1 /4 tsp. salt
18 oz. (1 lb., 2 oz.) bittersweet
chocolate chips (or bittersweet
chocolate, chopped)
1 cup (2 sticks) unsalted butter
or margarine
6 eggs
Preheat oven to 300 degrees.
Prepare the pan: Line the bottom
of a 9-inch springform pan with
parchment (place the pan on parch-
ment and trace around the edge with
a pencil or pen. Cut just inside the
circle to make a round that will fit
inside the pan). Spray the parchment
with nonstick cooking spray. Wrap
the outside of the pan with heavy-
duty foil (since you will be cooking
the torte in a water-bath, the foil will
keep water from entering through
the bottom of the pan). Place the
springform in a pan large enough to
accommodate it. Set aside.
Put some water in a pan or kettle,
and bring to a boil. Keep hot.
Make the coffee-sugar syrup:
Combine the coffee, sugar and salt in
a small saucepan over medium heat.
Bring to a boil, and cook, stirring,
until the sugar is dissolved (about 1
minute more).
Melt the chocolate: Place the choco-
late and butter in a microwave-safe
bowl, and cook on high for 2 min-
utes. Stir the mixture until smooth
(if the chocolate is not completely
melted, heat in 30-second intervals
and stir until melted).
Stir the sugar syrup into the choco-
late. Using a whisk, whisk in the eggs,
one at a time, until incorporated.
Transfer the batter into the pre-
pared pan. Fill the outer pan with
boiling water halfway up the sides of
the springform.
Bake 1 hour. Remove pans from
oven, and cool to room temperature,
leaving the springform in the water
bath. Remove the springform from
the water, and cover it with plastic
wrap. Refrigerate the springform, and
chill for 8 hours or up to 2 days ahead.
To serve: Run a knife around the
edge of the springform, remove the
ring of the pan and turn the torte
over onto a serving dish. Carefully
remove the metal bottom of the pan
and peel off the parchment. Sprinkle
the torte liberally with cocoa powder
or powdered sugar and serve with
fresh whipped cream if desired.
Makes 16 servings.
