LAYERED ROAST
TOMATOES WITH
MATZAH MEAL AND
GARLIC

olive oil for preparing pan
12 (about 3 lbs.) ripe tomatoes
(any color)
kosher salt to taste
freshly ground black pepper to
taste
1 cup matzah meal
1 cup chopped parsley
1 cup freshly grated Parmesan
or crumbled blue cheese, optional
1 /4 cup olive oil or extra-virgin
olive oil
1 Tbsp. minced garlic

The perfect green — and red —
vegetable for any meal. You can use
fresh green beans, but I really prefer
the frozen, not just because they're
easier to cook with but also because
the flavor is very fresh. Because I
love cilantro I'll often toss a handful
of the fresh stuff (along with some
fresh lime juice) into the vegetables
just before serving them.

Green beans:
3 Tbsp. olive oil or margarine
1 cup chopped onions
1 bell pepper, julienne-cut into
matchsticks
8 oz. fresh mushrooms, sliced
1 pound thin green beans (hari-
cots verts)
kosher salt and pepper to taste

CARROT PUDDING
This recipe is easily doubled and
baked in a large glass or ceramic
baking dish.

1/2 cup vegetable oil
1 /3 cup brown sugar
3 large eggs, separated
Ph cups grated or shredded
carrots
1 cup matzah cake meal
V2 tsp. cinnamon
1 tsp. salt
2 Tbsp. honey
1 Tbsp. orange juice
1 Tbsp. water

Preheat oven to 325 degrees. Spray
a 6-cup baking dish with nonstick
cooking spray, or rub with vegetable
oil and dust with matzah cake meal.

Preheat oven to 425 degrees. Brush
some olive oil in an attractive baking
dish that you will also use for serv-
ing. Cut the tomatoes into thick (at
least 1/3-inch) slices, and place them
in the prepared baking dish, over-
lapping them slightly. Season them
lightly with salt and pepper.
Combine the matzah meal, parsley,
cheese (if using), olive oil and garlic
in the bowl of a food processor, and
pulse to mix well.
Sprinkle the mixture over the
tomatoes. Bake, uncovered, for 15
minutes. Serve hot, warm or at room
temperature.

Makes 8 or more servings.

Get great tips for the holiday in a relaxed and fun

Topping:
1 /2 cup slivered almonds, lightly
toasted on a baking sheet in a
325-degree oven until golden,
about 10-15 minutes

Heat oil in a large skillet over medi-
um-high heat. Add the onions, bell
pepper and mushrooms, and saute
for 3 minutes. Add the green beans,
and toss with tongs to combine.
Cover the skillet, and cook for 8 min-
utes more. Remove to a serving dish,
season with salt and pepper and
top with the almonds. (Alternately,
transfer the cooked onion, mush-
room and bell pepper mixture to a
baking dish, and toss with the green
beans. Cover with foil, and keep
warm in a 225-degree oven for 1-2
hours, sprinkling almonds on top
when ready to serve.)

Makes 8 servings.

Set aside.
Beat together the oil, sugar, egg
yolks and carrots in a large bowl
using an electric mixer. Combine
cake meal, cinnamon and salt in a
medium bowl, and whisk or stir well.
Add this mixture to the carrot mix-
ture, and mix well. Add the honey,
orange juice and water, and stir until
smooth.
Place egg whites in a separate
bowl, and whip with an electric
mixer until stiff. Fold the egg whites
gently into the carrot mixture. Pour
the carrot mixture into the prepared
pan, and bake for 50-60 minutes,
until the top is set and the mixture
doesn't jiggle when the pan is shaken
a bit. Serve immediately.

Makes 8 servings.
