Canter's Deli, a favorite for locals, CHOCOLATE CHEESECAKE SANDWICH Graham Cracker Crust: Ph cups graham cracker crumbs 1 /4 cup granulated sugar 5 Tbsp. unsalted but- ter Cheesecake: 8 oz. cream cheese 4 oz. farmer's cheese (or cottage or ricotta cheese) 1 /2 cup granulated sugar 1 /2 tsp. vanilla extract 2 large eggs 1/2 cup sour cream 1 cup mini chocolate chips Sandwich: 2 slices of challah or egg bread (crusts removed) 2 thin slices of cheddar cheese 1 Tbsp. unsalted butter, divided shaved chocolate or chocolate chips for garnish Graham cracker crust: Preheat oven to 350 degrees. In a mixing bowl combine the graham cracker crumbs, granulated sugar and butter until blended. Firmly press the mixture into bottom of an 8-inch- square pan. Bake for 8-10 minutes , until golden brown. Cheesecake: Preheat oven to 300 degrees. In a large mixing bowl, combine the cream cheese and farmer's cheese . until the mixture is soft and fluffy. You can serve up a little "authen- tic Hollywood nosh" for your own Academy Awards after-party with Canter's Deli's "Chocolate Cheesecake Sandwich." — Gail Zimmerman until all the ingredients are well blended. While continuing to mix the ingredients, gradually add the eggs, one at a time, and then fold in the sour cream until everything is blended. Place the mixture over the graham cracker crust, and dis- tribute the chocolate chips evenly over the top. Bake for 45-55 minutes. Turn oven off and allow cheesecake to cool in the oven. Refrigerate overnight. To assemble sandwich: Remove cheesecake from the refrigerator and cut into 4-by-2-inch slices (they should be about 1/2-inch thick). Butter one slice of egg bread, and place it in a medium-size skil- let, buttered side down. Place one slice of the cheddar cheese on the bread and then place 2 slices of the cheesecake on top of the cheddar, with the chocolate-chip toppings facing each other. Place another slice of cheddar on top of the cheesecake, and then place the second slice of bread on top to form the sandwich. Butter the top of the sandwich. Cook on medium heat until crispy brown, and then turn over to crisp the other side. Slice the sandwich diagonally. Garnish each serving with some shaved chocolate or some chocolate chips. Serves 8.
