ness. Pinch or spoon off small pieces,
and drop into a large pot of boiling
water. The dumplings are ready when

PESTO CHICKEN SALAD
For poaching chicken:
1 lb. skinless, boneless chicken
breasts, pounded thin
1 cup semi-sweet
white wine
Pesto dressing:
1 1/4 cup fresh basil
leaves
1 cup olive oil
1 1/2 tsp. salt
1 tsp. ground
black pepper
4 cloves garlic,
minced
1 /2 tsp. sugar
For salad:
18 oz. bag romaine lettuce,
chopped
1 cup grape tomatoes, halved
1 /4 cup pine nuts
To prepare chicken: Place white
wine in a medium skillet over high
heat, and bring to a simmer. Place
chicken in wine, and cook until

2 Tbsp. butter or olive oil
1 lb. green beans, stem ends
trimmed
Heat 2 tsp. butter or oil on medium
heat in a large nonstick skillet. Add
the almonds to the skillet, and saute
until golden. Remove to a dish and
set aside.
Add 2 more Tbsp. butter or oil to
the same skillet. Add the green beans
and cook, turning once or twice
with tongs, until tender, about 8-10
minutes. Serve the beans with the
almonds sprinkled over.
Makes 6 servings.

Prepare dressing: Place basil, olive
oil, salt, ground black
pepper, garlic and
sugar in medium
bowl. Blend with an
immersion blender.
Remove 1/2 cup dress-
ing, and set aside.
Marinate chicken in
remaining dressing in
the refrigerator for at
least 1 hour.
To assemble salad: Remove chicken
from marinade; discard marinade.
Slice chicken into thin strips. Place
romaine lettuce, grape tomatoes
and chicken strips into a large salad
bowl. Top with pine nuts. Pour 1/2 cup
reserved dressing over salad. Toss to
coat. Makes 6-8 servings.
