favorite 1970s recipe for easy Faygo
Red Pop baked apples.
Just preheat the oven to
350 degrees. Peel as many
apples as you like, and
remove the cores. Arrange
the apples in a glass or
ceramic baking dish just
large enough to accom-
modate them. Sprinkle
with a little cinnamon
and sugar, and pour some
Red Pop over (back in the
day, when we wanted diet
apples, we used Sweet'N
Low and Diet Faygo Red
Pop). Cover with foil, and
bake for about 30 minutes,
until tender.
Sounds like dinner. ❑

THE MOST TENDER
SLOW-COOKED CHICKEN
Ph cup chopped onion (about 1
medium onion)
1 roasting chicken (5-6 lbs.)
1 lemon, halved
1 medium carrot, cut into 2-inch
pieces
Seasoning rub:
2 tsp. kosher salt
2 tsp. paprika
1 tsp. fresh ground pepper
1 tsp. granulated garlic (not gar-
lic powder)
1 tsp. ground cayenne pepper
1 tsp. dried thyme
i/2 tsp. dried oregano
Gravy:
pan juices
2 Tbsp. cornstarch
1 /4 cup water
salt and pepper to taste
Place the chopped onions at the
bottom of the slow cooker. Stuff the
chicken cavity with the lemon halves
and the carrot.
Combine the rub ingredients in a
small bowl, and whisk to mix. Rub
the chicken all over with the rub.
Place the chicken over the onions,
and cover the slow cooker with the
lid.
Cook on low about 5 hours (some
slow cookers cook faster than others
so check the chicken at 4 hours; it
may take even more than 5 hours).
Preheat oven to 425 degrees.

Carefully remove the chicken from
the slow cooker, and place in a bak-
ing dish. Cook for 15 minutes.
While the chicken is cooking,
transfer the juices into a small
saucepan over medium-high heat.
Combine cornstarch and water in
a small bowl, and stir to dissolve
the cornstarch. When the juices just
begin to boil, slowly whisk in the
cornstarch mixture and cook until
the gravy is of desired consistency.
Season to taste with salt and pepper
(if needed). Reheat over medium
heat when you're ready to serve the
chicken.
Makes 6 servings.

a mild winter, right about now
we are hankering for
those comfort foods that are
best prepared in your own
kitchen.
So on this week's menu is
comfort food with a capital
"C" — for tender roasted
chicken that's effortless.
A slow cooker allows you
to get on with your day
without babysitting dinner.
Serve the chicken with some
simple, gooey, stick-to-the-
kishkes dumplings and
green beans almandine.
If you're in the mood,
make yourself a little salad to go with
this meal and perhaps everybody's

GALUSKA
(HOMEMADE DUMPLINGS)
These are heavy, stick-to-the-
kishkes dumplings. If you'd like to
make a bigger batch, just remember
that you need one egg for every cup
of flour.
3 cups flour, sifted with 1 tsp.
salt
3 eggs
1 /2 cup cold water
Place the flour and salt mixture
in a medium bowl. Use a spoon to
make a well in the center of the flour.
Add the eggs and half the water, and
stir in the flour from around the
well with a fork until soft dough is
formed, adding more water if neces-
sary. Cover the bowl with plastic
