SPICY RICE, BLACK
BEANS AND CORN
3 Tbsp. olive oil
11/2 cups chopped onions
1 cup frozen corn, thawed
2 tsp. minced garlic
11/2 cups uncooked long grain
rice
1 tsp. ground cumin
1 tsp. ground coriander
2 tsp. chili powder
3 cups water
1 jalapeno pepper, seeded and
finely diced
1 can (about 14 oz.) cooked black
beans, drained and rinsed
1 cup fresh chopped tomatoes
salt and pepper to taste
1/2 cup fresh chopped parsley

Heat oil in a large nonstick skillet
over medium-high heat. Add the onions,
corn and garlic, and cook until softened.
Add the rice and spices, and saute for
3 minutes more. Add water, and bring
to a boil. Reduce heat to medium and
cook, uncovered, stirring every few
minutes until the water is absorbed. Stir
in remaining ingredients, and season
to taste with salt and pepper. Garnish
with parsley. Serve immediately, or keep
warm until ready to serve.
Makes 6-8 servings.

baking chocolate
1 cup flour

1 /2 cup unsweetened cocoa powder
2 tsp. ground cinnamon
2 tsp. chili powder
1 /2 tsp. baking soda
1 /2 tsp. salt
1 /4 tsp. cayenne pepper
1 cup semisweet chocolate chips
1 cup packed light brown sugar
1 /2 cup granulated sugar
1 tsp. vanilla extract
2 large eggs

Oprah Winfrey with the Ginsberg
family on Oprah's Next Chapter

Oprah's Next Chapter, Oprah
Winfrey's new show on OWN, airs a
two-part special on Chasidic Jews 9-10
p.m. Sunday and 10-11 p.m. Monday,
Feb. 12-13. During the episodes, Oprah
travels to Brooklyn to spend time
with two Chasidic Jewish families:
the Ginsberg family of 12, with whom
she enjoys a traditional meal, and the
Abrahamsons, one of the few black

She also conducts a no-holds barred

Preheat the oven to 325 degrees. Line a
baking sheet with parchment. Combine
butter and unsweetened chocolate in a
microwave-safe bowl, and microwave on
high for 2 minutes. Stir until melted. If
the chocolate is not completely melted,
cook in 30-second increments, stirring
each time until smooth. Set aside.
Combine flour, cocoa powder, cin-
namon, chili powder, baking soda, salt
and cayenne pepper, and whisk well. Set
aside. Combine both sugars, vanilla and
eggs in a large bowl and, using an elec-
tric mixer, mix until well combined. Add
the chocolate mixture, and continue to
mix until uniform.
Add the flour mixture, and mix until
just combined. Stir in the chocolate
chips until just combined.
Make a test cookie: Drop one cookie
onto the prepared baking sheet (use
a 3/4-oz. ice cream scoop if you have
one, or form the cookies into 1 1/2-inch
balls, flattening them slightly onto the
baking sheet). Bake 12-15 minutes. If
the cookies flatten while baking, repeat
with remaining batter. If the cookies
don't flatten, use your wet hand to flat-
ten the cookies slightly before baking.
Makes 2-3 dozen cookies.
