FINE CHINESE DINING

'A wonderful adventure in fine dining" — Danny Raskin

MINI LAMB KEBABS
1 /4 cup olive oil
'A cup fresh lemon juice
1 Tbsp. minced garlic
2 tablespoons chopped fresh mint
1 tsp. kosher salt
1/2 tsp. pepper
1 /2 cup minced cilantro
1 teaspoon ground cumin
2 lbs. boneless leg of lamb, cut into 1/2-inch cubes
24-32 small bamboo skewers or long toothpicks, soaked in water for 30
minutes

Combine all ingredients in a large zipper-style plastic bag, and turn several
times to coat the lamb. Marinate the lamb in the refrigerator for 2 hours or
up to 24 hours, turning the bag once or twice during the process. Thread the
lamb cubes onto the skewers, and arrange on a baking sheet. Preheat oven
to 450 degrees. Cook the kebabs for 8 minutes or to desired doneness (they
are small and will cook very quickly). Makes 24-32 appetizers, depending
on size.

CARAMELIZED ONION, ROSEMARY
AND ROASTED BANANA CROSTINI
Yes, banana is an unusual ingredient. Don't be turned off — these are sweet
and savory.

1 thin baguette, cut into 1/4-inch circles and lightly toasted
4 Tbsp. butter
3 cups chopped onions
2 Tbsp. chopped garlic
1 tsp. brown sugar
kosher salt and pepper to taste
1 Tbsp. fresh rosemary
3 firm, ripe bananas
3 Tbsp. sugar
Fresh chopped parsley, garnish

Prepare the vegetables: Combine butter, onions and garlic in a large skillet
over medium heat. When the butter melts, stir a few times to coat the veg-
etables. Cook, stirring frequently for about 20 minutes, until the onions are
golden. Add brown sugar, and cook for 3 minutes more. Season to taste with
salt and pepper. Stir in the rosemary. Allow the mixture to cool for about
15-minutes before using, or chill for up to 2 days.
Assemble and bake the crostini: Preheat oven to broil. Place the oven rack
in the center of the oven. Arrange the bread rounds on a baking sheet.
Spoon about a tsp. or so of the onion mixture (large rounds may need
more onions) onto the center of the breads (do not spread to the edges of
the bread). Slice one banana on a slight diagonal into about 1/4-inch slices.
Place one or two banana slices on each round of bread. Season lightly with
salt and pepper, and sprinkle very lightly with sugar. Broil immediately for
about 6-8 minutes, until the bananas are caramelized on top. Serve hot or
warm, sprinkled with the parsley. Makes about 32 appetizers.
