n this holiday season, appetizer
buffets are a great way to entertain
large groups of people without
having to cook a whole dinner. And
even if we're not hosting,
we're often invited to fes-
tive soirees and gatherings
where the question on
the lips of many invitees
escapes too soon: "Can I
bring anything?"
Before we know it comes
the inevitable answer —
appetizers. They're often
the most agonizing menu
decision for some cooks
when, in reality, they need
be nothing more than
smaller portions of your
favorite foods.
Start with one "thing" and begin
to build. Take soup "shots" or "shoot-
ers',' for example. These shot glasses
are simply 1- to 2-ounce versions of
any sort of soup. And with the advent

Chicken Filo Cups:
1 lb. cooked chicken, chopped
fine (cooked any way)
2 Tbsp. sesame seeds
1 /3 cup hoisin sauce
1 tsp. hot red pepper sauce (such
as Tabasco)
36-40 mini filo cups (in the freez-
er section of grocery store)

Sauce:
1 /2 cup finely chopped scallions
(green and white parts)
1 /4 cup chopped cilantro (leaves
only)
1 /4 cup fresh lime juice
2 Tbsp. water
2 Tbsp. sugar

of gourmet "soups in a box," simply
heating up and serving a spicy pureed
tomato soup is already one appetizer.
Thin-sliced cooked meats or
smoked fish served on thin
bread slices are another
easy appetizer. And cold raw
vegetables with a creamy
flavored hummus dip add
to the table. Bowls of olives
and a few crunchy nuts and
nibbles complete the pic-
ture. You're getting the idea.
On the menu, this is a
meal made of appetizers, a
few tasty tidbits to round
out your repertoire.
Open your doors. Pop
a few corks. Light a few
candles. And feed your
friends ... one bite a time. They'll
love the combination of flavors, and
you'll appreciate the ease. Don't forget
to serve something sweet at the end.

1 Tbsp. hot red pepper sauce
(such as Tabasco)
1 tsp. minced garlic
1 /4 cup minced red bell pepper

Preheat oven to 350 degrees.
Combine chopped chicken, sesame
seeds, hoisin sauce and Tabasco
sauce in a medium bowl, and stir
well until combined. Spoon small
amount of the chicken mixture into
the filo cups. Place the cups on a
baking sheet that's been sprayed
with nonstick cooking spray, or
line with parchment. Bake for 15
minutes, or until the filo pastry is
lightly browned. Meanwhile, com-
bine sauce ingredients in a bowl,
and whisk well. Set aside. Serve the
cups hot with the sauce on the side
to spoon over the cups as they are
served. Makes 36-40 appetizers.
