Fresh Soup Company. Eric Ersher, 47, of Bloomfield Township created the company in 1998 after he owned a small spice business and discovered that really good soup is hard to find." Zoup! has concocted hundreds of soup recipes includ- ing Tomato Bisque, Rustic Vegetable Bean, Mulligatawny, Chicken Pot Pie and Wild Mushroom Barley; they rotate 12 daily varieties. The restaurant also serves made-to- order salads, grilled sandwiches and baked goods. Zoup! now has 37 locations in eight states and Ersher says 11 more restaurants are in development. He's made a living giving customers that warm, well-fed feeling; now he's also helping feed Metro Detroiters who may not know where their next meal is coming from. "There are sad stories and hungry kids out there — it's our reality," Ersher says. "It's a pleasure to be in a position to help." Zoup! is one of nearly 100 local restaurants participat- ing in a new program called Detroit Area Chefs Feed the Need. Each restaurant is assigned one Wednesday a year to prepare, deliver and serve nutritious lunches to 100- 400 people at one of five area soup kitchens: two Cass Community Centers and Capuchin Kitchen in Detroit, and Baldwin House and Grace Centers of Hope in Pontiac. Participating chefs cook and deliver the meals that include protein, starch, salad, bread and dessert. "It's an unbelievable cause, and it's consistent with one of our core values, reaching out into the com- munity," Ersher said. He once served on the board of Oak Park-based Forgotten Harvest, which rescues surplus, pre- pared and perishable food from supermarkets, restaurants and other places, and donates it to emergency food pro- viders. Zoup! also has a nonprofit community foundation that raises money for local charities.
