JONI'S PEACH CROSTATA
Pastry:
1 refrigerated piecrust
Filling:
3-4 medium peaches
2 Tbsp. peach jam or preserves,
melted in microwave oven
2 Tbsp. sugar
1 Tbsp. cornstarch
'A tsp. salt
1 /4 tsp. ground cinnamon
Egg wash:
1 egg
1 Tbsp. water, milk, half and half
or cream
Garnish:
1 /4- 1/3 cup of Turbinado sugar
1 Tbsp. butter, cut into small pieces
Preheat oven to 375 degrees. Place
rack in middle position in oven.
Keep crust refrigerated until ready
to use. Use Silpat® or parchment
paper-lined cookie sheet. Soften crust
slightly, unroll and place on cookie
sheet.
Cut peaches in halves, remove pits
and cut into wedges. Add remaining
filling ingredients and toss well. Taste
peaches for sweetness, adding more
sugar if sweeter filling desired.
Assemble peach slices in the center
of the piecrust in a circular, overlap-
ping pattern; leave 1 1/2-inch of pastry
exposed for folding over. Assembled
peach slices can be mounded but not
too high to avoid a hollow outer crust.
Gently fold dough in flaps that overlap
in a circular pattern (it's supposed to
look "rough"). Discard collected liquid
at bottom of bowl.
Make an egg wash by mixing the
egg and water in a bowl and mix-
ing with a fork. Brush the egg wash
over the exposed pastry. Sprinkle the
Turbinado sugar over the egg wash.
Dot the peaches with the butter.
Bake for 50 minutes until outer
crust is golden brown; some juice
may run out the bottom of the pastry.
Remove from oven, cool and serve
with whipped cream or ice cream if
desired. Makes 5 servings.

recently took first prize
in the We're Cookin' in
Michigan Recipe Contest held earlier
this month at the Michigan Now
Festival in Northville. The recipe's pri-
mary ingredients had to be Michigan
grown or originated. Her winning
recipe for this "rustic dessert" will be
sold at all area Hiller Markets for a
month, with profits going to the Heinz
Prechter Bipolar Research Fund at the
University of Michigan's Depression
Center. Joni graciously shared her
winning recipe with the Jewish News.

ents its Fifth Keith Biennial Lecture,
featuring actor, singer and humanitar-
ian Harry Belafonte who will speak
on "Where We Are Headed',' 7 p.m.
Thursday, Sept. 8, at WSU's Community
Arts Auditorium.
Belafonte, known for his popular-
ization of the song "Hava Nagila" in
pop culture, has received numerous
awards from Jewish groups, includ-
ing the American Jewish Congress,
the Anti-Defamation League of B'nai
B'rith, Yeshiva University and Hadassah
International. Belafonte's longtime sec-
ond wife, Julie Robinson Belafonte, is
of Russian-Jewish heritage; he married
current wife Pamela Frank in 2008.
